Chuka Soba Uwezu, Kofu, Yamanashi 🍜🍜🍜🍜.
I have over 200 ramen restaurants on my go to list, but one of the shops I've been dying to go is this one in Yamanashi prefecture. Ramen enthusiasts might find this eerily similar to Tomita in Matsudo and that's because the owner trained there under the legendary chef himself. On ramendb, this shop is top five in Japan, so I just had to visit.
Uwezu is incredibly popular drawing ramen enthusiasts from all corners of Japan. Got to the shop around 1050 for an 1100 open and waited until 1245 for our meal. Covid forced the shop to limit seats, so that definitely played in to how long I waited.
Ordered the Tokusei Tsukemen along with a side of char siu rice bowl. Soup is incredibly similar to Tomita. The same distinct tonkotsu base and gritty, thick dried fish aftertaste. Noodles are the long, signature Tomita brand wheat flour blend with the familiar chewiness and thickness. Tokusei comes with the plate of four different proteins and soft boiled egg. Each char siu was prepared individually having their own unique aromas and flavors. Winner was hands down the charred pork belly on the right...melt in your mouth goodness.
