Yup yup! Tonight's Covid19 dinner. We have wild Alaskan sablefish/butterfish/black cod (you pick the name... Same fish) courtesy of @sitkasalmonshares.
The fish is grilled over wood with just a little salt, pepper, lemon, and extra virgin olive oil. Simple but wonderful!
Under the Sablefish are potatoes cooked in a cast iron skillet in the kamado grill. They are tossed with sweet onion, calabrese peppers, garlic, oregano, paprika, pumpkin seeds, and olive oil. Ohh... Salt and pepper of course. Duh.
Sauce is a simple balsamic tomato vinaigrette. So into the food processor went tomato, garlic, olive oil, balsamic vinegar, basil, sea salt, and pepper.
Critical to this kind of cooking... Great ingredients! The sauce is awful if made with unripe tomatoes or fake balsamic vinegar (hint... It should be thick, and if caramel is in the ingredient list run away). Same with the fish. There is NOTHING like a fresh wild catch. I'm sorry but farm raised does not compare. You can literally taste the difference. This fish came from a partnership with Sitka Salmon Shares.

We're feeling colorful today, and wanted to talk a little bit about Sockeye Salmon! ❤️ The rich reddish coloring of Sockeye Salmon meat is achieved through the fish’s diet. Out in the ocean, salmon eat lots of small free-floating crustaceans, such as tiny shrimp. These crustaceans are filled with molecules called carotenoids, which contribute to the beautiful coloring we all know and love. 🐟
When comparing wild-caught salmon to farmed salmon, you might notice a difference in color. That is because farmed salmon are often fed processed pellets, depriving them of those natural carotenoids that the wild-caught salmon get to enjoy. 💡
We use a process called flash-freezing to preserve the freshness of our seafood! Flash-freezing maintains the “look and feel” of seafood, without using artificial preservatives. It also helps fish resist freezer burn, for a much longer shelf life. ❄️ Flash-freezing locks in the nutrition, texture, and flavor that you can enjoy in our wild-caught seafood. 👌

Last month our @sitkasalmonshares box (like a CSA for Alaskan seafood) was full of beautiful wild Alaskan Pacific cod. We've been using some of the cod to make these delicious fish tacos with honey lime slaw once a week and we just can't get enough. They're so good!
Season 1 lb cod fillets (thawed, patted dry) with 1 tsp chili powder, 1/2 tsp cumin, 1/2 tsp garlic powder, 1/2 tsp onion powder, and a pinch of salt. Bake on a parchment paper-lined baking dish for 20 minutes at 400° F (or until internal temperature of fish is 145°).
While the fish is cooking, toss 8 oz of shredded coleslaw veggies with a dressing made from the juice of 1 lime, 2 tsp honey, 1/2 tsp cumin, and a pinch of salt. Peel and pit an avocado and slice.
When the fish is done, use a fork to gently flake the fish. Assemble tacos using your favorite tortillas, fish, slaw, and avocado.
So good! And I'm grateful for the convenience of having healthy, frozen seafood arrive straight to my doorstep once a month.

What's the difference between a wet scallop and a dry scallop? Wet scallops are treated with a solution of water and sodium tripolyphosphate, or STPP, which preserves them as soon as they are harvested at sea. Dry scallops are scallops that do not contain additives and solutions. 🧠

We recently got our first shipment from @wildalaskancompany and just want to say thank you! We have made fish n chips with the cod and this is a shot of their halibut fillets and our fish tacos (we ran out of corn tortillas so flour had to do). Both were amazing and some of the best fish we have EVER HAD restaurants included. Can’t wait to try the salmon next! Tonights delicious pesto salmon🐟dinny was inspired by the new @foodtrainers podcast after learning about omega-3s, wild fish 🎣 & Alaskan salmon. Did you know that all seafood from Alaska is sustainable and all fish from there is wild? 👍🏼The fish don’t accumulate mercury, pesticides or pollution because Alaska is so fresh and so clean, clean!🌲 Salmon is also a great source of omega-3, the main type of fat found in wild salmon. Other great sources include sardines and oysters and good plant based sources are walnuts, chia seeds and hemp seeds. Omegas are great for brain health, hormones and reducing cramps, healthy skin and can reduce body fat. How to: preheat oven to 375, coat salmon with pesto (I bought the wild Alaskan sockeye salmon & vegan pesto from @traderjoes), top with lemon slices and cook for 12 minutes. I paired mine with roasted broccolini, potatoes 🥔 and greens 🥬!
