who doesn’t love homemade meat (turkey) balls?! 🤷🏻♀️ these are full of flavor and pair perfectly with veggies, pasta, you name it🍝 they’re also grain free for my #paleo or #whole30 peeps! •
deats👉🏻: add 1/2 onion and a few garlic cloves to a food processor until minced🌪 then slowly add in the turkey meat and continue to pulse with oregano, parsley, thyme, basil, red pepper flakes, s&p, and an egg yolk🥚 shape the balls and throw them on a pan to brown and then in the oven for about 15 mins! toss them with your favorite sauce (mine is @raoshomemade) and you’re done😋

Always testing, always experimenting -- sourdough (demi) baguette trials continue. Switched over to @apieceofbread baguette formula (see his Dropbox link for the formula), and this is my second attempt this week. I followed everything very precisely, with the only deviation a 3% increase in hydration to adjust for my flour/climate. I'm using Giusto's Artisan Bread Flour (malted) for 100% of the flour. I still need shaping practice with his method (and you can see this in some tight areas in the crumb and crust), but I got into a good rhythm with these near the end. The flavor and texture of these baguettes are pretty eye-opening. Minimal acidity (to me, only a small hint at the end of each bite), pronounced sweetness and cereal falvors, an incredibly thin crust (mustering all the steam I can in my oven and perhaps dropping the cold bulk fermentation contributed here as well), and a soft and light crumb. A very different dough for me to work with given the semi-stiff and high % preferment, but the results speak for themselves: I ate a full baguette myself shortly after baking, half plain and a half with Straus salted butter. Unapologetic gluttony. More practice to come and more improvements, I'm sure. Thanks for sharing the recipe!
