This is my best Keto Shred transformation by far and she’s already signed up now for her third round. In her first keto shred she lost 30 pounds alone in 30 days. From 200 to 170 and then in the middle of the second keto shred she went on vacation and came back and even after vacation lost some weight. My hat goes off to this young woman due to the clear hard work she gave as a police officer sometimes working 40 hours in three days for New York City and still managing to take every damn meal to work. This is what I call making it work (at work)
A vendor brought lunch in today to our meeting with the client and I ate a little before deciding that it wasn't worth it to risk cross contamination. When you're #celiac you're pretty suspicious of anything you didn't personally order. I had googled the restaurant when the food came and it *seemed* #glutenfree but my motto is "when in doubt, leave it out".
Fortunately I had time between meetings to go to the company cafe and it had a few things I could eat. I got this chicken salad then added some shredded cheese from the salad bar and two hard-boiled eggs. Safe and low carb!
And as always I had back up snacks in case like jerky, cheese snacks, quest bar, etc!

6 large eggs
1 1/3 cup almond flour
2/3 cup coconut flour
1 teaspoon baking powder for best results use no aluminum
1/2 teaspoon xanthan gum optional
1/2 teaspoon salt .

Recipe: · 3/4 cup salted Butter melted
· 1 cup almond flour
· 3/4 cup sweetener (erythritol)
· 2 Eggs beaten
· 1/3 cup unsweetened Cocoa powder
· 1 teaspoon Baking soda
· 1 teaspoon Vanilla extract
· pinch Salt
Mix everything together with a hand mixer. Make sure its mixed well! The batter should be like a typical brownie batter. Not super thick but not loose or runny. Add almond flour as needed to get it to the right consistency.
Pour into a 8x8 pan. I put down parchment paper first because I like to make sure I can pull it out quickly without it sticking to the pan. I spray the parchment paper with sprayable ghee. But, do whatever you want!
Bake at 350 degrees F for about 25 minutes. I’d keep checking on it with a toothpick or fork. Once the fork comes out clean – you’re good to take them out of the oven and let them cool!
I melted sugar free chocolate and spread it on top with a couple sugar free chocolate chips. I use Lilly’s brand, but hersheys sugar free would work too!

🍕 SEXTA É DIA DE PIZZA 🍕
PIZZA LOW CARB
1 xícara de frango desfiado bem compactada e cheia
50 gramas de queijo ralado (minas padrão, muçarela ou prato)
2 colheres de sopa bem cheias de azeite
1 colher de sopa de fermento químico em pó
Orégano e pimenta (Não usei sal porque já cozinhei o frango com sal e o queijo também vai salgar a massinha).
PREPARO - Coloque todos os ingredientes da massa no processador (ou liquidificador) e bata até ficar homogêneo. - Despeje a massa em uma forma de pizza (usei uma com teflon) untada com azeite. - Abra a massa com a ajuda de uma espátula. Nessa hora fica parecendo que não vai dar certo, mas siga em frente. - Leve ao forno pré aquecido por 10 minutos e depois de 10 minutos, verifique se já está douradinha por baixo. A minha assei mais ou menos a 180 graus. - Quando dourar por baixo use uma espátula para virar, asse por mais 10 minutos ou até que os dois lados estejam douradinhos. - Retire do forno, acrescente os recheios que você escolher e volte ao forno por mais dez minutos.

Bolinho de Mirtilos Low Carb .
- 3 ovos;
- 1 colher (café) de essência de baunilha;
- 4 colheres (sopa) de creme de leite (usei o fresco);
- 1 xícara (chá) de farinha de amêndoas;
- 2 colheres (sopa) de farinha de coco (opcional);
- 1 colher (chá) de psyllium (opcional)
- 1 colher (sopa) de fermento em pó;
- Mirtilos a gosto (usei em torno de 70 gramas).
- 4 colheres (sopa) de adoçante (usei eritritol). Modos:
1. Bata bem os ovos, a essência, o creme de leite e o adoçante. Pode usar a batedeira, mas eu bati com um fuê mesmo.
2. Adicione aos poucos as farinhas. Mexa até ficar bem homogênea.
3. Coloque o psyllium e o fermento, misture delicadamente.
4. Pode adicionar um pouco dos mirtilos direto na massa (fiz isso). E deixa o restante para colocar por cima antes de assar.
5. Se for usar forminhas que não são de silicone, untar com manteiga e farinha de amêndoas. Se for de silicone, não precisa untar. Coloque a massa nas forminhas, deixando 1 dedo da borda pois irá crescer um pouco. Decore com os mirtilos.
6. Leve para assar em forno pre aquecido a 180 graus até dourar. Aqui demorou 20 minutos.
Rendimento: 10 bolinhos.
Dinner was quite yummy and simple! Kielbasa sausage sauteed in avocado oil with a side dish of jicama "fries" seasoned with paprika, garlic powder, sea salt and pepper tossed in more avocado oil. Used our air fryer!! Sorry bad lighting and I was starving while taking the pic 😄 First time trying jicama and I love it!

Second meal: Quick & easy. I'd been dreaming of these eggs all day and they did not disappoint!
✔Chili cheese eggs -- 2 eggs fried bacon fat with 2 oz homemade chili + 1 oz shredded cheddar then tossed under the broiler for a few min. Added a dollop of sour cream and Taco Bell hot sauce because why would you NOT do that?
✔(not pictured) 2 pieces uncured bacon and another turkey stick because I had the hungries & wanted moar protein.
✔1 cup Rebel Creamery vanilla. I told y'all this was happening again 😋

* 뱃살과 옆구리, 뒷구리살, 그리고 팔뚝과 허벅지 등이 많이 늘어났다 생각은 해 왔었는데 어제 3개월만에 재본 인바디로는 거의 체지방만 4kg 정도 증가했고 내장지방 레벨도 크게 증가함. 식습관이 뭔가 완전히 잘못되었다. 주말에 거의 치팅폭식과 음주를 하는게 제일 큰 문제인것 같고 최근 평일에도 고기외에 빵류를 많이 먹어서 고탄고지가 되어버림😭😭 유제품 특히 치즈를 많이 먹은것도 있고...... 정신채리자.....

New Hampshire Cider Donuts
For my 40th state I wanted to celebrate this fantastic fall weather. Based on my google image search I am convinced that New Hampshire is in a perpetual state of fall, and I love it. If that’s accurate I’m gonna start packing tomorrow!
One of my favorite things to do in the fall is spend a day at the corn maze/ pumpkin patch and try their fresh cider and cider donuts. It was fun to make my own this year!
- 1/4 cup almond flour
- 1 Tbsp coconut flour
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp Apple flavor
- 3 Tbsp @swervesweetie granular
- 1 Tbsp swerve brown
- 1 Egg
- 2 Tbsp pumpkin purée
- Apple cinnamon tea bag
- 1/2 tsp apple cider vinegar
- 1 Tbsp almond milk
- 4 oz water
- Cooking spray
1. Heat oven to 350
2. Boil water and add tea bag, milk, and vinegar. Set aside for a minimum 10 minutes.
3. Mix dry ingredients
4. mix remaining ingredients with the dry ingredients
5. Add 2 Tbsp vinegar tea mix
6. Scoop into 3 greased donut molds and bake.
7. Let cool completely before removing from mold.
8. Brush the donuts with remaining tea vinegar
9. Mix 2 Tbsp granular, 1 Tbsp confectioners, and 1 tsp cinnamon.
10. Toss donuts on sugar mix until full coated.
1. I’m obsessed with using pumpkin in all my baking because it’s low calorie and makes baked good extra moist. In my opinion, if you add enough apple extract you can’t taste the pumpkin but of you disagree then try half or swap out with some fat such as sour cream, butter, etc.
2. the fall apart if not fully cooled. Adding a little xanthan couldn’t hurt!
