Look at this beauty! She is a pet of a Guatemalan family. Kids spend their days cuddling her and she will lay down so you can pet her belly. They were feeding her with baby bottle 😍. She's better here than dead in a plate don't you think?
Tea was a mix of leftovers and what my other half was eating. Veggie loaf, carrots, sprouts, mash, 50g stuffing and Bisto pepper sauce (3 tsp), yummy 😋
Dinner was leftover cheesy pasta and roasted veg.
@wagamama_uk Katsu curry and vegan dumplings 😍 since waga’s changed their menu and got rid of my fav vegan options this is pretty much all I eat from there but I can’t say i’m ever complaining. So good

Tofu is an absolute vibe 😍 Lots of people seem to be a bit scared of it as, granted, if you’re not really sure what to do with it it can be a bit bland and boring. It totally doesn’t have to be though. It’s one of my absolute fave things to cook with and the spicier the better in my book 🌶This is chilli, garlic, sesame and maple sticky fried tofu and it is 💣 Are you a tofu lover or not? What’s your fave tofu dish? #itsallinthepressing#tofuvibes

Varian Cafe - 8/10. Roast and char on today’s brus was perfect - hit the right consistency between crunchy exterior and soft, decadent, leafy interior once you give it a few bites. Only main gripe is the herb oil this was roasted in - picked up a lot of garlic which isn’t always a bad thing, but would have preferred a less intense flavor so that the quality of the sprout itself could’ve been appreciated on a higher level. Added a little bit of plain balsamic vinegar and feta which made the entire flavor profile a bit confusing bc the garlic was really heavy. But this is all minor, overall pleased with this Friday lunch sprout #brussels#sprouts#friday#lunch#food#eat#meal#vegetable#vegetarian#garlic#hummus#health#leaves#feta
Lunch 🌱 struggling with not going over my new calorie limits I got yesterday using my new lower weight, adjustments are always hard I think 🌱🌱🌱🌱 130 calories of broccoli 🥦 & 140 calories of pico (black beans & corn were added) *also I had 2- 100 calorie bags of skinny pop this morning.. so 200 calories there 🌱

I know there’s a buncha y’all out there feeling hit by this flu season pretty hard, and the rest of us trying not to get it! That’s a good excuse to add a bunch of immune boosting foods into to your meals... and also maybe get a flu shot (but I haven’t yet either, so I’m not judging you). Anyway! Here’s an immune boosting twist on a basic vegetable soup. I sautéed fennel, onion, celery, ginger, and garlic in coconut oil, added curry powder, turmeric and smoked paprika and then my homemade veggie stock. Then I added Yukon potatoes and simmered until soft. I stirred in @misfitfoods_ squash and chicken sausage, frozen butternut squash and peas for a few minutes, then added kale and zucchini off the heat. Finished with yogurt and parsley. Sub canned chickpeas for sausage for a yummy #vegan option. #yum #homemade #soupseason #healthy #healthyfood #cleaneating #vegetarian #vegetables

Sticky Teriyaki Tofu 🤤 Created by the gorgeous Valerie @vegantraveleats 💛 .
Shared Via @GlowingPlants ✨🌿 #GlowingPlants
Save For Your Weekly Grocery List 📝 .
1 14 oz firm or extra firm tofu, pressed
½ cup corn starch
1 tsp salt
½ tsp white pepper
½ tsp ground ginger
1 12 oz bottle of your favorite vegan teriyaki sauce, or homemade if that’s your jam
3 tbs Oil
Preheat the oven to 375
Cut the tofu up into ½ inch cubes.
Mix together the corn starch, salt, ground ginger, and white pepper on a large plate, and toss tofu in the mixture, shaking off excess
Heat an oven-safe skillet over medium-high heat and when its nice and hot add 3 tbs oil. Let that heat up for a minute then add tofu cubes.
Cook for 5 minutes, flipping halfway so it gets a nice sear on both sides. Off the heat, and pour most of the teriyaki sauce on the tofu, reserving about ½ cup for serving. Flip the tofu in the sauce so it gets nice and coated, then place in the oven.
Bake for 15 minutes, remove from the oven, flip each piece of tofu, spoon some of the sauce in the pan onto the tofu then return to the oven, bake for another 10 minutes and serve!

Chinese BBQ rice (Char Siu rice '叉烧饭')😋 By @woon.heng ⠀
🍃Chili sauce: Blend 4-5 red jalapenos, 3 tablespoons rice vinegar, 1 tbsp maple syrup, 2 cloves garlic, 1 slice ginger, dash of salt until well combined. Taste test, more salt if needed, this chili sauce should have a tangy flavor. Lime juice can be used for extra flavor. Refrigerate until ready to use.⠀
~ 1 cup Jasmine rice, rinsed thoroughly & drained⠀
~ 2 cloves minced garlic, 1tbsp grated ginger, 3tsps sesame oil, 1/4 teaspoon salt⠀
~ 1 1/4 cups water⠀
(Instructions adapted from Bon Appetit, I usually use rice cooker but in case you prefer a pot☺️)⠀
✔️In a heated pot with sesame oil, sauté garlic & ginger until fragrant. Add rice & stir continuously, then add water & salt. Bring it to boil, turn heat to low & let simmer (just barely) for about 18 minutes. Turn off heat, cover lid & let rest for 15-20mins. Prep tofu while waiting. Use a fork to fluff the rice when ready.⠀
~ 1 pack firm tofu (16oz), drained really well, cut into 3 long logs, shallow pan fried until golden brown with oil⠀
🍃Char Siu sauce: Mix together 4 tbsp hoisin sauce, 2 tbsp garlic chili sauce, 1.5 tbsp soy sauce, 4 tbsp water, dash of berry powder (optional) until well combined⠀
✔️Pour sauce into a pan, bring it to boil and let simmer until sauce thickens a little. Slowly add in tofu, using a spoon, scoop sauce and coat tofu well. Sauce will starts to thicken up more & stickier towards the end. Once tofu is all coated, turn off heat, cut into 1/2 inch thick pieces & slather with remaining sauce when serve.⠀
