Chutney - does look same as the one from the two days back post. But truth, its new 😄 This time sauted red chilli - urad dal - coriander leaves - mint leaves. Blended it all with coconut, salt, asafoetida and a hint of tamarind.
And for #paniyaram or #paddu - tempered oil with mustard, sauted chopped onion and grated carrots. Salted just for the vegetables. Added to batter. Added some coriander leaves. (Skipped chilli for kids and curry leaves due to non availability). Colour is cos of overdose of carrots.
I got ballsy and pulled out my ebelskiver pan, that I confidently purchased in Solvang (NEVER used before) and decided I should make her favorite Say Cheese! Pancakes as ebelskiver.
I thought, yeah! Ebelskivers could be cool! I’ll just add a little almond flour so it can puff up and hold the round shape a little better. Makes sense!
I will not be applying for restaurant jobs in Solvang anytime soon, because, holy shit, ebelskivers are really tough to make! Like really, really hard guys. They confidently show people making them with chopstick type tools, totally chill. I was a hot mess making these. I finally discovered my smaller silicone spatula was what worked for me and went with that.
Per usual when it comes to feeding kids, IT AINT PRETTY! But hell, she ate all of them! I made over 1 cup of batter (approx 10 small ebelskivers) she just kept eating. Plenty of protein and spinach provided to her.
So although it just wasn’t Instagram pretty, what matters is that she’s nourished and happy.

Today I made abelskivers with strawberry jam... Mmm... Quarentine is not going to be good for me
Tada! 21 abelskivers , super filling! A did one third plain, one third with strawberry jams and one third with lemon curd. I puréed strawberries and reduced for a syrup and then paired with maple syrup too. My grandmother’s pan was AMAZING. 65/366 #abelskivers#familybaking
I mean, when given the option of cooking small round pancakes (abelskivers) or cooking an actual dinner, I'm going with magical pancakes.
Did we eat anything else? No, we did not. And NO ONE even noticed #winning 😂🙌.

I wanted to share one of my very favorite recipes that has a very special place in my heart with you all since today marks the end of the holiday season!
As long as I can remember, my family has made Abelskivers for holiday breakfasts. Think spherical pancakes but 100x better. It is a Danish snack that can be served with anything! The Trette’s (my family), typically eats them with jams, Nutella, eggs, and meat.
It is such a special recipe to me because I remember making them with my Grandma Judy growing up. Since she’s passed away, my dad picked up the tradition of making them on holidays. When I got married, my aunt gifted me a special pan to make them. So, when I’m not able to be with the Trette fam, I can make them for my little family and friends! It’s the best and makes me feel connected to my family members that are here and that have passed on!

A few days ago I made these Danish Æbleskivers for a family breakfast and I’m still thinking about them 🤤 They are like puffed pancake balls topped with powdered sugar 🥞 The trick is folding beaten egg whites into the dough. 🥚🥚🥚

What a fantastic morning. Got 16 miles in on the Lake Apopka out and back trail with some fantastic scenery and wildlife!! Then stopped at a cute little coffee shop for breakfast and coffee.
