1. Remove the membrane or silver skin from bottom side of ribs.
2. Season both sides of ribs with dry rub.
3. Grill on Weber grill using the indirect method for 2 hours or until tender, keeping the temp around 300 F.

Last week I started this recipe as you can see in my last post. I made this delicious pulled lamb shawarma.
Smoked it low and slow for about 3,5 hours at 140°C after that I wrapped the lamb in aluminium foil and put it back on @thebastardnl till it reached coretemp 90°C. At 93°C the meat was really tender.
Let it rest for an hour in foil and it was ready to pull. Taste was spot on shawarma only super tender.

Reverse seared Flat Iron steak might be my favorite steak! So tender, so juicy, and I can slice it thick or thin. It’s just perfect! Seasoned with @caribeque Big and Bold Beef. Smoked on the @traegergrills Ironwood at 225f until 115f IT. Pull it off and cranked the Ironwood temp to 500f 🔥 Then seared this cut for a few minutes on each side. Finishing temp was 133f 👌
