Smoked Aubergine and Yogurt Mezze • Patlıcanlı Yoğurt Salatası ••
There isn’t anything that truly reminds me of being in my little nan’s kitchen, then the smell of aubergines smoking away 🥰 This mezze is the PERFECT accompaniment to any grilled meat, and when paired with some fluffy flatbreads.. oh my! When creating this dish, a lot of people like to pop the aubergines in the oven at around 200 degrees for about an hour until softened inside, HOWEVER, I find that this doesn’t give you a true smokey effect like you’d find when using a bbq!

2x large aubergines
For the marinade:
3 tbsp Greek/thickset yogurt
3-4 tsp dried mint (nane)
2x garlic cloves (grated!)
1 tsp pul bieber (or red chilli flakes)
1-2 tsp olive oil
1/2 lemon, juiced
Step one: Taking your aubergine, poke all over with a sharp knife. Using either a bbq, or a grill, place your aubergine directly on top of a very low flame (I used a little metal basket that I picked up in TK Maxx to do this but placing it above will work just as well, you just have to keep it steady). Rotate every few minutes, for around 10 minutes or until the skin is burned all over.
Step two: remove aubergine from the heat, place on a plate. Remove the skin by holding the auberine by the neck and slicing from top to bottom. As the skin is burnt, it should be easy to remove - if it isn’t, your aubergine isn’t ready - place back on the heat for a few more minutes. Finally, chop off the aubergine head. You should be left with just the aubergine flesh.
Step three: On a clean plate, dice up the aubergine flesh to create a paste. Add the yogurt, lemon, grated garlic, salt dried mint and pul bieber to the aubergine. Mix to combine.
