Since I am now officially a housewife, this year I’m going to try my hand at gardening. I’ve been wanting to do my own garden for awhile now, but just never had the time. I can’t tell you how many tomato plants I’ve bought over the years that sat in their pots and died because of that.
Time to start reading up on it! From what I remember, gardening is mostly a science and good fortune.

It’s Chilly out, so Vegan Chili Mac, with Avocado, Cilantro and Extra Purple Onion! I also sprinkled on some Tajin, which is a very lime-flavored-forward chili pepper seasoning, very good on chili🌶 This is a pretty straight forward chili recipe that substitutes veggie grounds(I used Morningstar Farms)for the meat, and the addition of whole wheat elbow macaroni, making it a really satisfying high fiber meal! It is absolutely hearty and delicious! It would make a great Super Bowl Meal🏈 A written recipe is in the works, let me know if you would like it. I will eventually DM to you😉 #eattherainbow
2 su bardağı kuru fasulye
1 adet orta boy soğan (piyazlık doğranmış)
1 adet orta boy domates
2 yemek kaşığı ince kıyılmış maydanoz
1 yemek kaşığı tuz
1 yemek kaşığı toz şeker
1 türk kahvesi fincanı zeytinyağı
2 yemek kaşığı sirke
Yarım limonun suyu
Sumak ya da kırmızı pul biber
İsteğe göre 2-3 adet haşlanmış yumurta
Fasulyeleri akşamdan haşlayacağınız tencereye alın ve üzerini 4-5 parmak geçecek kadar su koyarak kenara alın.
Sabah şişen fasulyelerin suyunu süzün tekrar sudan geçirin ve üzerini 4-5 parmak geçecek kadar su, tuz ve şekerini ekleyerek orta ateşte yumuşayıncaya kadar haşlayın.
Domatesleri küp küp doğrayın.
Soğanları ince uzun piyazlık şeklinde doğrayın ve kıyılmış maydanozla karıştırın.
Fasulyeleri süzün ve salata kasesine alın. Önce soğanı sonra domatesleri ekleyin.
Son olarak sosunu dökerek servis yapın. (Kullanacaksanız haşlanmış yumurtalarıda bu aşamada ekleyin.)
Have you tried growing your own sprouts? Sprouts are a cheap and easy way to add more veggies in your diet! Plus they are fun to watch grow! 5 days, a jar with a mesh lid (or even just a piece of cheesecloth) sprout seeds (these are mung beans) and water is all you need! I love adding them to toast, salads, grain bowls, sandwiches, the list goes on. Plus they are great in Asian inspired dishes as well. Since we both are big Bean Fans, we could nearly eat this deliciousness everyday🌱😎 This Spicy Tomato Bean Stew tastes even better when a day or two passes😬🥰 it’s vegan of course and yees i made a big pot so we can eat as much of it as we want to🙈
⚡️Za’atar Scented White Bean Dandelion Green Stew⚡️
If you were named after a pantry item what would you be? I would clearly be BEANS 🤣. Or SPICES 😍. Or GREENS 😇 (though they’re usually in the fridge lol). Realistically though , I’d be all of the above 😁
I guess I’ve picked some good names because as @danbuettner found, the longest-lived communities in the world thrive on these basic foods #bluezone . A cup of beans a day helps you live gracefully until a 100. Greens are a true superfood. And spices? Well the only thing to be said about them is SPICE SPICE BABY 🙌🏽🥰
⚡️Sautee 1 tbsp olive oil on medium heat ⚡️Add 1 chopped leek (white and light green parts) and sautee until tender
⚡️Add 2 minced cloves of garlic and sautee for a minute
⚡️Add 1/2 tsp turmeric, 1 tsp smoked paprika and 1/2 tsp gently crushed coriander seeds and sautee for a minute until fragrant
⚡️Add a chopped carrot and celery stick, pinches of salt and pepper and sautee for 2 minutes
⚡️Add 1 cup crushed or chopped tomatoes, 2 cups of water, 2 bay leaves, a sprig of rosemary and a can of rinsed and drained white beans and stir until mixed well
⚡️Add salt and pepper and bring to a boil. Lower the heat to a simmer and cook with the lid on for 20 minutes, stirring every few minutes to prevent sticking
⚡️Add 4-6 chopped leaves of dandelion or other leafy greens and cook covered for 5 minutes. Add more water if you like. You’re looking for a thick, creamy stew like consistency.
⚡️Adjust the salt to taste. Serve with a dollop of your fav yogurt (I’ve used @kitehillfoods vegan yogurt) and za’atar with a drizzle of olive oil (obsessed with @terraneanherbs spicy za’atar #notsponsored )
⚡️Sprinkle with fresh parsley and chili flakes. Inhale.
