As we all get ready for another busy working week we would like to take the opportunity to say thank you.
Thank you to all of our volunteer firies and emergency workers, thank you to all the great people helping supply meals & serving them to our tired workers, thank you to all of the tradies and everyday people donating their time to help rebuild fences, sheds and buildings and thank you to the forestry workers.
Something exciting happened last week..... we got our permit, that's right, after months of patiently waiting (and at times, not so patiently) we finally received confirmation of our planning permit approval. *Cheers to us*
But I had kinda lost my mojo, stopped looking (every.single.night) at finishes, tiles, colors, furniture - and now we're back on, full steam ahead I have to get my head back in the game. So much to do!
Aaarrggghh I'm not really sure where to start..... how about just here, at these lovely modern barn style facades to get me back into gear. Lovely!

In the last 12 months I have gained a new love for silence. For peace. For quiet. I appreciate my time so much more now than I ever thought possible. I have learnt to let go, to not worry so much, to go out and enjoy life without worrying about what is at home waiting for me... Dishes, washing, cleaning, groceries, chores... It can all wait. It will still be there. It does not make me a bad Mum, it makes me a better Mum!

Luckily, at this stage we aren’t directly affected by the fires. But, I feel saddened and devastated to see how it has affected Beechworth and other surrounding towns that rely heavily on tourism.
With that in mind, for the next 4 weeks I would like to offer the following:

This old fella has been visiting the orchard garden numerous times over the last few weeks. I have fences, barriers and shade cloth that keeps wallabies and birds from eating most of our produce. The feeling you get driving up to this place sums up the tragedies that would have occurred in such an awful place. The deceiving look of the outside compared to the torturous inside. Once one enters they were never to leave. The ha-ha walls makes you’re skin crawl #asylum#beechworth thankgod for modern education regarding mental health.

So much fun to be had with the lovely Nygrie down at Almar on a Saturday morning between 9am until 12, playing music and singing.
The little people that visit Almar on Saturday mornings talk about her all week and first thing Saturday morning, ask their parents if they can go and visit ‘the music lady’.
We love this community that we have created and that grocery shopping 🛒 for both parents and children can be fun and something that elicits excitement 🙏

Smells like trebbiano. Has this sea spray, hint of Gordo olives, chalky thing going on. It’s like walking the backstreets of Erskinville on a balmy summer evening with the scent of jasmine is in the air. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Bit of time in glass gives it that clementine marmalade on toast character. Fine acid reverberates on the palate - it’s complex and layered and finishes delightfully fresh.

Statement windows..... we love them, you love them, everybody loves them, but really, how practical are they? We were chatting with BuildHer Masterclass student and our very own social Unicorn Tamara about her plans the other day (she is building holiday accommodation in Beechworth... but more on that another day!) and we kinda crushed her window dreams! 🥺
She presented these three (undoubtedly beautiful) images to us and although they're super pretty, we took a step back and asked her how she planned to furnish them? This made her think..... hard.
So we discussed the options. This really only came down to:
1. angled curtains (like in pic 2) but they can never really be open
2. shutters (which really end up blocking the view anyway and they're $$$) OR
3. Changing the window design so they're straight and can easily be furnished- which will also save $$.
Although somewhat disappointed, I think she realised that 3 was the best and most cost effective decision. The room and whole property will still be amazing, but sometimes you need to make tough choices for an overall better and more functional outcome.

Yesterday we left home and went into Albury, the fire rating was ‘extreme’ ahead of a cool(er) weather front and strong southerly winds. Not the kind of day we wanted to be exposed to out here, high on the escarpment and with big fires in the Mt Buffalo area across the valley. After riding out the record breaking 46 degree temperatures in Albury we decided to head back home last night as the cool(er) change arrived and winds low, the risk of a new fire starting lessened. Although very very tired I woke up at 2am and still awake now at 6am, thick and strong smoke has filled the house, looking across the open plan living room it looks like a fog filled room. My eyes are stinging, asthma is playing up. I have been watching lame TV as a distraction, keeping my breathing calm, a damp washer to breathe through helping somewhat. According to the Vic Emergency App the fires are creeping north to the back country just beyond our neighbouring town of Myrtleford, a little spot called Nug Nug has been evacuated in the valley down along side Mt Buffalo. There are reports on the Beechworth Community Page of falling ash in town. And now the sun is up...well it’s somewhere on the other side of this gunge, the wall of smoke, I will investigate the so said ash. For the moment we are safe, just hoping that communities and friends are safe too up in the Alpine Valleys. Really hoping the conditions, the weather, the wind and the humidity are favourable for us today and all areas under this terrible fire threat. Time to dampen the face washer again. Sarah x

What is everyone’s tips for that perfect tart pastry ?

-Mine would be to make the dough in advance and give it time to rest -use the dough straight out of the fridge (cold) but mix before rolling out to get the perfect consistency with out the dough cracking
- after forming dough in your tart ring freeze it slightly before baking to stop it from shrinking -no need for blind baking -Lightly spray with melted cocoa butter before baking to ensure the tarts stay crisp
