Celebrating Jennifer’s story today. Can you relate? “Truth is, I let life get the best of me. I cried myself to sleep often because I didn’t know why I was doing the things I was doing and why I couldn’t stop myself. I was depressed and didn’t know it. I was drinking a pot of coffee a day, working too much, not spending any time with my hubby & kids and extended family, eating out 2-3xs a day, drinking 3-4 beers a night, staying up late watching Netflix to numb my mind of my troubles, maybe getting 4-5hrs of sleep a day. Sleeping in to the afternoon hours on the weekends. I had lost my ability to think clearly, rationally, and make simple every day decisions. At that rate, not hard to see how my weight escalated to a 40lb weight gain within 2yrs. On top of the 20lbs I never shed from having babies. Not hard to see how lifestyle triggered my Sjogren’s Syndrome. Not hard to see why my skin was so terrible that it made me insecure which forced me to become a hermit and not venture out to meet people. Not hard to see why I up and quit my job without a plan in place. I just knew I needed to get out of the toxic situation I put myself in.
This program changed things for me in a radical way. I came to it with a weight loss need. What I got out of it was so much more than weight loss. I got ME back. I had lost my way, and what the components of this program did to help find myself again was life changing and eye-opening. From a comparison photo, all you can see is the 55lb weight loss, but what you cannot see is the internal transformation in mind & body that I have been able to maintain for over 2yrs now. What I’ve been through and risen above from, I want for others who have found themselves lost to the cards life’s dealt. This is so important to me, that I, myself decided and have been paying it forward and showing others what this program can do for them. BURRITOS DE PAVO SALUDABLES 🌯
8 hojas grandes de col verde (aproximadamente 1 manojo)
Sal kosher, al gusto
2 cucharadas de aceite de oliva
1 cucharada de chile en polvo
1 cucharadita de comino en polvo
1/2 cucharadita de semillas de cilantro trituradas
1 libra de pavo molido
1/2 cebolla amarilla, cortada en cubitos
3 dientes de ajo picados
1/2 pimiento rojo, cortado en cubitos
1/2 taza de tomates asados, escurridos
1 lata de habichuelas (frijoles) pintos, enjuagados y escurridos
1 aguacate en tiras
1 taza de hojas de cilantro
Pico de gallo, para servir
Yogur griego, para servir
rodajas de lima, para servir
Hervir una olla grande de agua y sazonar generosamente con sal.
Retire los tallos de acelga de la hoja.
Llene un tazón con agua helada y sazone con sal.
Coloque las hojas de col en el agua hirviendo durante aproximadamente 45 segundos y luego colóquelas en el baño de hielo. Una vez frío, colóquelo sobre una toalla de cocina y escúrralo completamente.
Caliente una sartén grande a fuego medio-alto y agregue el aceite de oliva. Agregue las especias y revuelva constantemente hasta que empiecen a formar espuma. Agregue el pavo y rómpalo con una cuchara de madera. Sazone con sal y reduzca el fuego a medio.
Cocine bien, de 6 a 8 minutos. Agregue las cebollas, el ajo y el pimiento rojo y cocine por 3 minutos a 4 minutos adicionales. Agregue los tomates asados al fuego, los frijoles y cocine por 5 minutos adicionales.
Para armar, coloque dos hojas de col verde en una tabla de cortar, superpuestas ligeramente para obtener una masa de burrito de aproximadamente 10 pulgadas. Coloque una línea de la mezcla de pavo y una línea de la mezcla de pico de gallo en la hoja de col. Luego cubra con aguacate en tiras y hojas de cilantro. Enrolle el burrito doblando los lados sobre el relleno y luego enrollando el fondo hacia arriba. Cortar por la mitad y servir con yogur griego, pico de gallo extra y limas. Yesterday I went under the knife again. This time to remove my Gall Bladder. It was kind of sudden and I am very grateful for being lucky enough to have gotten it seen to so fast. Not all are as fortunate. ⠀
About 12 months ago I started having "attacks". They weren't too severe and I just thought it was bad reflux. But soon enough the attacks became more common and more severe. Crippling me with pain to the point I would be on the bathroom floor feeling like I was having a heart attack. But I was too stubborn to go to hospital because I didn't want to be the girl who went to hospital for bad reflux.⠀
Late December I had another attack while I was out shopping and it was a local pharmacist that told me it was in fact gall bladder attacks and not reflux - which was confirmed a week later by an ultrasound - I was "riddled" with stones. ⠀
So yesterday I gowned up and went under the knife. The surgeon said my stones were on the move and I was lucky I did it when I did because I would have had another serve attack within the next couple of days. ⠀
I am recovering well. Better than expected. I was terrified of waking up because in the past the GA has really knocked me around. Hot flushes, nausea, vomiting, rashes... you name it. But yesterday was totally different. I dont know if it's because he used less drugs because I was 60kg lighter this time, or if it's because my body is fitter and healthier - but I'm not complaining. I haven't needed any pain meds at all since waking up after surgery and even got told off by the nurse for walking around too much (she said this was a recovery ward not a training facility hahah). ⠀
Home today after final Dr checks and plenty of rest for the next 2 week's. That will be the hardest part for me. No exercise or training for 2 whole weeks (that includes parkrun) ⠀

"2 years, 70 pounds less. I’ve changed more than just physically since this time but to be honest I’m really proud of myself. In 2016 I was 205 pounds and as of today I’ve lost 70. I think I my current weight(135)is pretty good for 5’ 10”. I’ve gone from size 15 jeans to size 2/4, I’ve worked so hard and now I can see it. 2 years later I’m so different in ways I never would have guessed. Thank you to everyone who supported me but more than that thanks to everyone who poked fun at me because without you guys I would have never made this change for myself. It was lost healthily and one of the most difficult things. I’m still not 100% confident but I feel so much better and I’m fine with slightly bragging about this. No matter what others say, only you can define your worth. So from a 1X to a small, from 2016 to 2018, and from my life then to my life now, if there’s one thing I learned is that hard work will eventually pay off. (Also the weird corset top thingy of the costume makes my waist look snatched) .

. These pictures are 7 years apart...on the left, I was about to turn 32 and currently embarking on a raw vegan diet which I still lovingly refer to as my starvation diet. I barely ate a thing during the week just to make it to my cheat weekends. This went on for about a year as I transitioned to a vegan diet which was equally as bad. Every year was something new, something that I had hoped would finally work to take and keep the weight off. I exercised twice a day until I developed plantar fasciitis and my feet ached constantly like I was walking on broken glass. I was sooooooo close to throwing in the towel and giving up for good. Decades of trying anything and everything only to have no results and even less hope. Then keto stepped in, right as I was about to accept that I'd never lose weight. The picture on the right shows a girl that keto saved. I just turned 39 and I've never in my life been more healthy, active and happy! Keto is EVERYTHING! 💕
Also, can we talk about the amazing physical changes that weight loss gives you...like I just didn't have a neck before?! 😂 I love seeing how much bigger people's eyes get when their face slims down, it's amazing! What crazy changes have you guys noticed on yourselves?? 😍
