stressed = desserts backwards - did you know that?
When I am stressed I do a few things...like get short with my kids and husband, feel like that kid in no good very bad day book, and then beat myself up for being such a dick to everyone. Oh, and I eat cereal...I used to a LOOOOTS of cereal, but I rarely keep it in my house for this reason.
So here's what happened... on Tuesday I had a post automatically go to my social media, and I didn't catch it until after I was scrolling to see that there was the large social media movement for black-out Tuesday. Well shit, didn't I feel like the biggest freaking a-hole ever. Here I am, a white woman, talking excitedly about my wellness group starting this week with very little clue to what was going on socially.
See, I'll let you in on something...I haven't watched or listened to the news in over 5 years. I used to go from Good Morning America, to Regis & Kelly, then the View, and then reality TV as I worked from home as an IT professional, that was my routine of having those on in the background until work was over. I cut it out cold turkey one day after nearly having a panic attack finding out Osama Bin Laden had been killed and my fear went back to that little girl in middle school who's whole family was in aviation freaking out and wondering if her dad or uncles were the pilots on the planes she just saw fly into buildings.
So yes, I'm slightly out of touch of what is happening and there's some things I can do better at being aware of, but I also am not going to be mad at myself for not keeping up with all the things that can stress me.
I'm rarely ever up to date on the news & politics and that may seem insensitive...it's just not where I have been putting my energy, but there are always areas I can improve upon.
Remember.... stressed = desserts backwards...try not to get under unnecessary stress, if so, choose your desserts wisely 🍷🍫🧁🥧

Breakfast for dinner! Home sausage patties seasoned with salt, pepper, paprika, garlic powder, thyme, and sage. Topped with a fried egg and some aged cheddar cheese.
@birchbenders paleo pancake mixed with egg whites (instead of water), and organic ground flax and chia vanilla maple flavor, then filled with organic nonfat Greek yogurt mixed with @lakanto keto maple syrup.
This is not a beautiful meal. I’ve been cleaning my house all day getting ready for the carpet cleaners to come, and I surely did not feel like cooking. There wasn’t enough leftovers for all of us, so I made myself some “brinner” tacos. (You’ll notice from my previous posts that I really like breakfast!) I know that Siete tortillas technically aren’t compliant, but they’re still grain free and I’m starving. Lol! I’m letting it slide. These are filled with homemade breakfast sausage (@thewoodenskillet ‘s recipe), eggs, leftover American fries, and avocado slices. I usually fit veggies in there, too, but I ate some fruit and I’m calling it a day. I’m exhausted! Also, note the paper plates again because cooking so much really dirties a lot of dishes 😂
So here’s my ugly imperfect dinner that is technically compliant. And it was stinking good. 😄 I hope your Thursday is going well! Baby is 25 weeks along today. That’s a wrap on my Day 4!
A few nights ago, double dipped Texas toast, French toast. Aaron made everything and we ate outside. Nothing and I mean NOTHING taste better than food you did not cook on dishes you do not have to wash 😬

What I used:
quinoa (cook according to package instructions)
handful of plum tomatoes, halved
1 chicken sausage link, sliced
1 avocado (psssst: how cute is this baby avo?! It’s the perfect size 🥑)
2 poached eggs
EBTB seasoning (duh)
sausage & tomatoes ⏩ sauté in a pan to heat up/add some color [leave tomatoes cut side down, flip sausage a few times]
to poach egg ⏩ crack egg into bowl, bring a pot of water to rolling boil, turn heat to low and swirl water to create a vortex, plop egg into water and cook with top on for ~3 mins [for medium-hard poached egg, cook for longer] 😛
Breakfast for dinner?? Sure! Spinach and feta cheese omelette. Growing up my mother used to always make this for my dad. I would wake up to the pungent smell of nasty feta lol and knew it was going down in the kitchen. I missed lunch today, so I needed a filling dinner! So breakfast for dinner it was! I can’t believe all of this was only 5 pts on 💜 . Skinny bagel 3 pts, whipped cream cheese 2 pts, unsweetened strawberry jam, 2 eggs with peppers, 🥭, 🥝 .
Trader Joe's came out with turkeyless protein patties. I'm not sure how much they taste like turkey but they're pretty good. They definitely smell better than the original meatless protein patties, even though those taste good too. I chopped up one patty and used it in a post-workout tofu scramble and really enjoyed it. They're rather high in fat and very high in sodium (14g and 420mg, respectively, per patty) so I wouldn't eat them on a regular basis but they're definitely a great option for anyone looking for vegan burgers.
Since Kyle was at work, the #toddlertower got a test use even though it isn’t 100% finished. I think Lil Kyle pulled it up to the counter backwards but he sure was happy with his own kitchen workspace!

Started off with mixed berries and whip cream for an appetizer. Then they got a bowl of pancake mix to flavor how ever they wanted!! 🍫Bring on the chocolate and sprinkles. They each got to cook their own pancakes and are now devouring them while watching UP!!🤗

what do you cook when you don’t feel like cooking? breakfast for dinner will always be my throw-together dinner because we almost always have eggs and bread, and the rest can be improvised! i’m a terrible omelette maker which is why i always go with a scramble. this easy meal has it all- protein, high fiber carbs, fat, and lots of micronutrients too. // two egg scramble with onion, zucchini, and tomatoes (you can use literally any vegetable here) and cheddar cheese, plus a side of avocado toast. if you don’t have avocado, you can do toast with cream cheese/lox, butter, or nut butter. #breakfastfordinner#easydinner#dinnerideas

Sheet pans are an amazing short-cut way to a bright, healthy, and tasty breakfast! BTW, Did you know gut health also supports mental health? We packed this sheet pan full of gut-friendly veggies to keep spirits up and tummies happy! It's easy to throw veggies you have on hand to create a colorful Sheet Pan Veggie Breakfast Bake. Don't forget to add our Avocado Ranch Cashew & Almond Dip for extra flavor and creaminess!
2 Sweet Potatoes, peeled and diced
3 cloves garlic, minced
1 red onion, diced
1 red bell pepper
1 can chick peas, drained, rinsed and dried
5 large eggs (optional)
Seasoning blend: ½ teaspoon each of cumin, paprika, salt pepper, chili powder
1. Preheat oven to 425 degrees.
2. Clean, chop and prep vegetables (first 5 ingredients), add them all to a large bowl with 2-3 TBSP of olive oil and seasoning blend. Toss to coat fully.
3. Pour the seasoned vegetables onto a greased baking sheet in an even layer.
4. Cook 25-30 min, remove pan from oven, create 6 wells and gently crack an egg into each, if using.
5. Return to the oven and cook 7-8 min or until egg whites are just set.
6. Remove from oven and add toppings, season with additional salt and pepper to taste. Serve immediately, family style!
