My first chia seed pudding 🖤 brekky is definitely becoming my new fave meal in lockdown...
These are so simple to make and full of nutrients! Chia seeds are 😍 Add 3-4 teaspoons of chia seeds to a glass of almond milk and stir them through thoroughly. Put them in the fridge overnight and top with your fave things the next morning. I love frozen rasps, frozen bluebs, peanut butter, almond flakes. I added honey too as it does need sweetening. Enjoy 💫

I saved a couple of tablespoons of coconut cream from the top of the tin yesterday evening, especially for my porridge 🥣 -
Soaked the oats in boiling water first, then added a blob of coconut cream and microwaved for 2 minutes, added extra coconut cream on top, sprinkled with matcha green tea. Then topped with mango and blackberries,
Sooo thick and luxurious 🤤

Good start to the day after a long night of my daughter rolling around in my bed! I swear she only does this on weekends aswell 😂🙈 Simple and delicious breakfast of smashed avocado on toast with poached eggs, parsley and chilli 🌶
Now off for a walk and will probably spend majority of the day in the park 🥰
Bowl Full of Happiness! 🍇🥭 Missing breakie @sisterfields from our Bali holiday a little too much today & since I had these wooden bowls from there so thought of creating something similar from there.
Main Base -
1 serving @ace.blend vanilla protein
1 cup @rawpressery Unsweetened Almond milk
1/2 cup fresh Mango pulp (no sugar)
6-8 cubes of ice
For Topping -
1 Tablespoon Chia seeds @true.elements
1 Tablespoon Sunflower Seeds @true.elements
3-4 chopped green grapes
Few chopped pieces of Mango
2 Tablespoons of Mango-Coconut flavour @fitandflexgranola
- Blend all the Main Base ingredients in a Blender till the ice is all blended well and forms a thick smoothie - In a Bowl pour the thick smoothie - Top it with all the Topping ingredients as you like to decorate
I absolutely love having the @womensbest protein pancake mix in the cupboard, because it means I can just whip up a stack of delicious pancakes! This time, I’ve mixed cacao powder in to the mix to make them nice n chocolatey!
AND, if you haven’t tried popcorn on pancakes, then it’s a must! The crunch with the pancakes tastes great together!
Sometimes you just need one GIANT pancake! The bigger, the better!
Blueberry oven baked pancake recipe (serves 1)
35g wholemeal flour
1/2 tsp baking powder
1/4 tsp ground cinnamon
50g fresh blueberries
1/2 lemon, zested
1️⃣ Whisk the egg in a jug, then add the flour, cinnamon, baking powder, milk and blueberries.
2️⃣ Heat a knob of butter or splash of oil in a small frying pan until melted/hot and pour in the mixture.
3️⃣Place in the oven at 190C for 18 minutes. To serve, top with the lemon zest, some yogurt and more berries.
This plate of fluffy little pancakes was the perfect way to start a Sunday morning.
🥄Made from a mixture of @quakeroatsuk oat flour, @myproteinuk salted caramel protein powder, milk and a dash of oil, baking powder, lemon juice and salt.
🥄 Topped with blueberries and a peanut and cacoa sauce.

🚨New flavor alert: Apple Cinnamon Oatmeal Bake.
Typically not a warm fruit kind of person, but this combo was incredible and so simple to make (but it feels fancy) .
➡️Ingredients: (Serves 2 ppl) .
• 1c of rolled oats .
• 1 ripe bananas (mashed) .
• 2T ground flaxseed meal.
• 1/3 medium zucchini grated)
• 1 heaping spoonful of unsweetened apple sauce .
• 1scoop of vegan banana maple protein powder from @the_ambrosia_collective .
• 1/3c almond milk .
• 1tsp vanilla extract .
• 3/4tsp baking powder
• 1tsp cinnamon .
• 1/4tsp sea salt .
1️⃣ Mash banana in a bowl then add flaxseed meal and a bit of water to thicken.
2️⃣ Add your grated zucchini and stir in the remaining ingredients to create your batter (should be the consistency of a thicker overnight oat recipe). .
3️⃣ Add to an baking pan or a ramekin and bake for 35min @ 350°F (baking time depends on dish size)
4️⃣Topped with sautéed apples (in 1T coconut oil, 2tsp coconut sugar + 1tsp cinnamon; melt the oil first then add the rest of the ingredients to sauté on the stove top for 7min) & creamy almond butter. Enjoy!

I can be happy with homeschooling during the lockdown because it means that I can spend more time with my children and have an extra ration of cuddles, all inclusive.
I can prepare and enjoy yummy food everyday because I have food in my fridge and in my cupboards. You get the idea.
Happy people are the ones I love being with the most. I always feel more energized, joyful and simply happier when I am with them. They pull me up with their joy, their positivity, their smile.
The good news is that we can all become the happy person of someone else or work towards it. Isn’t it wonderful?
It takes a little practice of course, just like deep breathing, not absorbing or reflecting negativity, controlling our thoughts...
Like anything in life, practice increases your ability. Let’s start today by being positive in our thoughts and words to others and towards ourselves too. Let’s make it a challenge: let’s verbalize each thought (especially the bad ones) using the positive tense and welcome the change inside yourself.
You might be surprised how little things add up at the end of the day, the week, the month! You might even make people happy and that’s gold!! Speaking of which, I’m sharing this porridge bowl with you and I hope it will bring you as much happiness as it gave me to create it.

Keeping it simple this morning with some coconut yogurt topped with raspberries, granola, cashew butter, and cinnamon. I’m a little new to the cashew butter train, and I don’t think I’ll ever get enough of it!!! Raspberries & cashew butter are the PERFECT combo!

Oats made with coconut milk, 2 heaped tbsp coconut yog, 1 tsp cinnamon, 2 tbsp mixed seeds. Then topped with date and cashew butter caramel (ish), granola, coconut yoghurt and dark choc buttons.
