You know when you get a craving for GOOD bread? I've never made a successful loaf with a breadmaker but plenty by hand.
Today I used a ridiculously easy, new recipe for a crusty french baguette!

Unfortunately someone left the key on in the truck last night (me, this time) so the lovely lady who does the before school check stopped in and did it at home instead then we jumpstarted my car to have lost half the day already!
So to mix up the day - I have Izzy at home in the office doing Mathletics and learning French on Duolingo, Hunter writing the alphabet and his name. Then we have a nature treasure hunt planned with a following study on what they find.
Raspberry smoothies for lunch (we found 2kg frozen in a lump from an orchard in the freezer from last summer!) Then they are baking some cookies to demonstrate reading, teamwork while I get some work done.

In honor of Amazel’s last day, I made her a Kolac. Kolac is a celebration bread that Serbian’s usually make for Slava. I wanted to make this for her because she has been such a huge impact at the Roastery. She trained us on everything we need to know Princi wise. She has opened my eyes on the italian bakery world and I cannot wait to learn more on the baking side. Chicago loves you, Amazel! 💖

Certain things as a Chef I take for granted. Like assuming that my friends know the difference between Butter and Vegetable Oil Spread. Butter is made from sweet cream and Margarine is made from....well see for yourself. My opinion, if you CAN eat Butter, ALWAYS choose the one on the bottom.

It’s starting to feel like a long time since I first moved NYC-adjacent and started working in and around Manhattan. I’ve struggled with the duality of loving the city and being deeply homesick for the quiet of country living ever since.✨
Last year, for Derek’s birthday, I took him to dinner near Columbus Circle. We sat near the window, and could see down to the fountain in the circle below. Shortly after we started eating, the lights around the base flickered on, illuminating the pavement below. Suddenly, a ballerina (full tutu, en pointe) emerged from the shadows and began dancing around the fountain. Occasionally, we’d spy the flash of a camera - she was having her picture taken. But from our window perch up above, it seemed like a private show for only us. On nights like that one, I fly high on the pace and magic of the city. Then a few days later, I get stuck in the rain while trying to balance four heavy cake boxes and a speeding cab douses me in gutter water as it shoots by, and I wonder why I’m not holed up next to a fireplace in the middle of nowhere.✨
But perhaps the duality is what makes it great. Life anywhere isn’t perfect all the time - there are good days and bad days. The bad days make you appreciate the good. The country is even more relaxing after a few weeks of speedy city life. The choices and opportunity of the city seem even brighter after a few days of calm and quiet. The more I adapt to living my life, the more I realize most things aren’t just one or the other. They aren’t just good or bad. They aren’t just bitter or sweet. Just about everything can be both. Sort of like how the squeak of the bus brakes makes me cringe in the harsh light of early morning, but somehow also sweetly sings me to sleep at night.✨

easy weeknight dinner vibes 😍 one dish oven baked white wine + butter chicken and rice! it’s the perfect cozy, hearty, simple and satisfying meal to pair with your fave veggies. i’ve been throwing this together recently and finally put it into an actual recipe for you guys! it’s so good- and so are the smells that will fill your kitchen ☺️ grab the recipe below!
for the chicken:
5-7 chicken thighs, boneless skinless
2 tbsp olive oil
2 tsp italian seasoning
1 tsp sea salt
1 tsp paprika
1 tsp garlic powder •
for the rice:
1 medium yellow onion, diced
4 cloves of garlic, minced
2 tbsp grass fed butter
1 + 1/2 cups vegetable or chicken stock
1 + 1/2 cups water
1/2 cup white wine
1 tsp sea salt
1/4 tsp black pepper
2 cups of jasmine or basmati white rice •
1. preheat oven to 350F and lightly grease a casserole dish (preferably a casserole dish with a lid if you have one, but foil will work). 2. add all ingredients for the chicken thighs to a bowl and set aside to soak up the flavors.
3. meanwhile, prep the onion and garlic. add to the casserole dish, then stir in the remaining ingredients for the rice. don’t worry that the butter is solid, it will melt and spread in the oven!
4. make sure everything is well combined, then add the chicken thighs on top of the rice. pour any oil/seasonings over the top left behind in the bowl the chicken was marinading in.
5. cover the casserole dish with a lid, or tightly cover with aluminum foil. bake for 50 minutes.
6. uncover the casserole dish, then bake for another 20 minutes.
7. remove from oven and give everything a good stir. place the chicken back in top of the rice mixture and broil for 3-4 minutes to crisp the chicken.
