Following on from my odd harvest, picture 1 was that day’s dinner, incorporating the harvested Chantenay carrots from my garden, green beans from a friend’s garden, new potatoes, cauliflower, corn on the cob and, of course, the stuffed chicken thigh. It was yummy and I planned it as dinner for two evenings but, on the second evening, I changed my mind. The chicken thigh was eaten cold (actually I ate most of it while preparing the rest of the components). The corn was cooked fresh (leave it in its leaves and give it three minutes in the microwave) a jacket potato and the half onion (oops, missed that off the dinner of the roast) and cauliflower all covered in grated Cheddar cheese whilst still hot. This Cauliflower pizza with vegetarian minced meat is low in calories (406), high in protein (48 grams), low in fat (13 grams) and low in carbs (17 grams)!!!
I got inspired to try this recipe by an Instagram post but adjusted it to my need for more protein!
For the base I used 400 grams Cauliflower rice. Never used it before so I was curious!
Cook the cauliflower rice in the microwave for 3 minutes. Let it cool down and if there is any moisture left squeeze it out as much as possible.
Grate the cheese and mix 50 grams of the cheese with the cauliflower and an egg in a bowl. Divide in two portions on pizzastones (or baking paper). Bake for 15-20 minutes in a preheated oven at 220ºC.
Take about 200 grams sifted tomatoes, garlic, fresh basil, vegetarian (or the real thing) minced meat. Heat it in a pan and make sure it doesn’t get too moist. I added some Paprika powder and Nacho Cheese Seasoning from @deliciou. Deliciou has more seasonings and they are the bomb!!!
Cut the sweet pointed paprika in thin rings and half the cherry tomatoes.
When the base is done and slightly coloured take it out of the oven and add the minced meat-tomatoes sauce on top.
Place the sweet pointed paprika and tomatoes on top and divide the rest of the cheese over the 2 pizza’s.
Put it back in the oven for another 15 minutes.
Before you serve add some basil leaves on top.

How is everyone’s weekend going? Doing anything fun. I baked some swirly bread today and now we are off to my brother’s football game. I love going to the football games in the fall reminds me of when I was in high school. I was a cheerleader which I don’t think I have ever told you guys haha so going to the games is always fun to think back on that time.
Roasted Cauliflower Salad with Creamy Honey Mustard Vinaigrette. So happy it's September. So happy we can roast veggies again. So excited to make this salad. It's not your average boring salad salad --> roasted, spiced cauliflower and chickpeas, tossed together with a honey mustard vinaigrette, feta cheese, and avocado...greens n' things. On a baking sheet, toss together 1 head cauliflower, 1 can drained chickpeas, olive oil, 1 tbs chipotle chili powder, 2 tsp paprika, 2 cloves garlic, 1/2 tsp crushed red pepper flakes, and a pinch each of salt and pepper. Roast for 20 minutes or so.
In a large bowl, combine 6 cups mixed greens, 2 Persian cucumbers, 1/4 cup fresh herbs, and 2 tbs chives.
1/4 cup extra virgin olive oil
juice of 1 lemon
3 tablespoons honey
2 tablespoons dijon mustard
2 tablespoons tahini
2 tablespoons apple cider vinegar

4 1/2 lb whole potatoes⠀⠀
3 tbsp vegetable oil⠀⠀
1 tsp salt⠀⠀
1 tsp paprika⠀⠀
1/3 stick butter⠀⠀
1/3 cup plain flour⠀⠀
2 cups whole milk⠀⠀
2/3 cup sour cream⠀⠀
1 tbsp tomato paste⠀⠀
2 fresh jalapeños, finely chopped⠀⠀
2 cups grated cheese, divided⠀⠀
1/2 tsp salt⠀⠀
Bring a large pan of salted water to boil. Scrub the potatoes, then cut each into 8 wedges. Cook for 6 minutes, then drain and leave to cool slightly in a colander.⠀⠀
Preheat the oven to 425 degrees. Divide the oil between two large baking trays. Add half of the potatoes onto each, then sprinkle the salt and paprika over them. Use a spatula to spread the wedges out and cover each in the oil, salt, and spice. Bake for 30 minutes, turning once or twice to allow for even cooking, then leave to cool on the trays.⠀⠀
Make the cheese sauce- Melt the butter in a large saucepan, then add the flour and stir constantly for 1 minute. Gradually add the milk, whisking thoroughly after each addition to eliminate lumps. Once all of the milk has been added, mix in the sour cream, tomato paste and half of the chopped jalapeños. Once smooth, add half of the cheese and stir until melted before removing from heat.⠀⠀
Assemble the pie- Preheat the oven to 375 degrees. Scatter a handful of the remaining grated cheese into the flan dish to help the wedges stay put. Arrange the wedges in a circular pattern in the dish. Pour in the cheese sauce, then top with the remaining cheese and jalapeños.⠀⠀
Bake for 15 minutes until warmed through and golden brown on top. Serve immediately.⠀⠀
