INGREDIENTS (for 2 servings)
2 tablespoons canola oil
1 boneless, skinless chicken breast
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 onion, medium, thinly sliced
1 teaspoon salt
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
3 tablespoons olive oil
3 tablespoons lime juice
1 teaspoon brown sugar
1 teaspoon chili flakes
1 teaspoon salt
1 head romaine lettuce, chopped
1 avocado, sliced
Heat the oil in a pan over medium-high heat. Cook the chicken, bell peppers, onion, salt, chili powder, cumin, and garlic powder for five minutes, stirring constantly.
Flip the chicken, and cook for another five minutes, until chicken is cooked and vegetables are slightly soft. Remove from heat and slice the chicken into strips.
In a small bowl, combine the olive oil, lime juice, brown sugar, chili, and salt, stirring until evenly mixed.
In a large bowl, toss the romaine lettuce with the chicken, peppers & onions, avocado, and dressing.

First meal of the day 😱 at 5:20pm. I was so looking forward to having the same thing I made hubby this morning but I never got hungry and I am not going to force myself to eat lol. It’s been 21 hours since my last meal, since the last time I ate! Don’t worry, I am not “starving” myself or anything like that, this is just what being in ketosis is like. Your hunger disappears. So I naturally fasted until I was hungry again, that happened to be just a couple of minutes ago but I wasn’t even that hungry so I just had some chicken salad by itself. Dinner will be within the next couple of hours so I didn’t want to overeat so I had a serving of this and will probably start dinner here soon so I can just reheat it when hubs gets home from work. Oh and I’m also down 42 pounds as of today 💗. That’s 1 pound (actually only 5 ounces) from seeing one of my scale goal weights. A number I haven’t seen in years. Anyways, a lot of people say sugar free candy stalled their journey, but I eat 1-2 pieces a day and it has not stalled me at all and I only add it in if it will help me hit my protein goal. I also want to use this as a reminder to update your settings in carb manager as you lose weight! Enter your weight every time you weigh and then go to getting started and click through ok and then hit apply my macros- this is so important! Your macros will change as your weight changes! •
Assembling & presenting & preparing some lovely things for a banquet at @tavern56atbrownsrun today. I made curry chicksn salad garnished with pickled red onions & hives infused with star anise, assembled English cucumber cups with salmon mousse garnished with chives and gold leaf, and assembled gruyere gougeres with herbed goat cheese mousse. 😍
**🇬🇧/🇺🇸 Chicken-bluecheese-salad with Tahini-dressing**
Today the kitchen had a rest, well more or less ...
We enjoyed an insanely good tasting salad with a dressing which we’ve mixed together spontaneously, it came out perfect and wasn’t the last time for sure!
We washed and cuttet the salad with the tomatoes in little pieces and seasoned it with salt, sesame seeds and fresh lemon juice.
The tender chicken was seasoned with coriander, cumin, pepper, smoked-salt, chili, anise and roasted in olive oil afterwards.
We’ve made us the dressing out of some Tahini, dijon-mustard, fresh garlic, pepper, salt, fresh parsley, fresh lemon-juice, white wine vinegar and water - it’s insanely amazing in taste!
Enjoy the salad with the chicken, topped with some blue cheese and the dressing - simply an awesome combination!

**🇦🇹/🇩🇪 Hühnchen-Blauschimmelkäse-Salat mit Tahini-Dressing**
Heute blieb die Küche so gut wie kalt, naja fast...
Es gab einen super geilen Salat mit einem spontan zusammen gerührten Dressing, den es bestimmt nicht das letzte mal gab!
Den Eisbergsalat und die Tomaten gründlich waschen und in Mundgerechte Stücke schneiden.
Den Salat mit etwas Salz, Sesam und frischen Zitronensaft abschmecken und zur Seite stellen.
Das Hühnerfilet wurde auch in mundgerechte Stücke geschnitten, mit Koriandersamen, Kreuzkümmel, Pfeffer, Rauch-Salz, Chili und Anis gewürzt und mit Olivenöl ausgebraten.
Das Dressing haben wir aus Tahini, Dijon-Senf, frischen Knoblauch, Pfeffer, Salz, frischer Petersilie, frischen Zitronensaft, Weißwein-Essig und etwas Wasser angerührt.
Den Salat mit dem Hühnchen anrichten, mit dem Dressing und dem Käse garnieren und genießen!
Es hat alles unglaublich gut harmoniert und war super lecker!

I made Asian chicken salad 🥗, grilled sardines and Gyoza dumplings 🥟 for Yokomin who came back from walking lesson at Satoru Japan. ・
A classic chicken salad recipe! It combines tender chicken with the perfect blend of flavors!
125 gm Chicken
4 tbsp Olive Oil
1 tsp Red Chili Flakes
1 tsp Oregano
½ tsp Salt
6-7 Garlic Cloves
¼ cup Mayonnaise
½ Lemon Juice
1 tsp Black Pepper
Marinate 125 gm chicken with 2 tbsp olive oil, ½ tsp black pepper, ½ tsp salt & 6-7 garlic cloves. Rest for 30 minutes.
In a bowl add ¼ cup of mayonnaise, ½ tsp black pepper, ½ lemon juice, 2 tbsp olive oil,1 tsp oregano, 1 tsp chili flakes & parsley. Mix it well.
Cook marinated chicken from both sides & make small pieces of it.
In a mayonnaise mixture add chopped tomatoes, chopped capsicum, lettuce & chicken pieces. Mix it well.

Rosemary Chicken, Bacon and Avocado Salad.

• 4 slices thick-cut bacon.
• 1/2 pound boneless, skinless chicken breasts.
• Salt and pepper.
• 1 tablespoon olive oil.
• 2 tablespoons minced fresh rosemary.
• 6 cups spring greens and/or butter lettuce.
• 1 bunch watercress.
• 1 cup cherry tomatoes, halved.
• 1 large avocado, thinly sliced.
• 2 teaspoons dijon mustard.
• 1/4 cup olive oil.
• 1/4 cup red wine vinegar.
• 1 teaspoon minced fresh rosemary.
• Salt and pepper.
1. Heat a large skillet over medium-low heat and add the bacon. Cook until it’s crispy and the fat is rendered. Remove the bacon and place it on a paper towel to drain any excess grease.
2. Season the chicken with salt and pepper. Cover with the rosemary. In the same skillet, over medium-high heat, add the chicken and cook until golden and crisp on both sides, about 5 to 6 minutes per side. Remove the chicken and let sit for a moment while you assemble the salad, then slice it.
3. Toss the greens with the watercress and the tomatoes. Top with the sliced chicken, the bacon and the avocado. Drizzle with the rosemary vinaigrette!
Chicken Cobb Salad with Balsamic Vinaigrette.
INGREDIENTS (Servings 2):
• Mixed greens.
• 2 leftover cooked chicken breasts – roasted rotisserie, poached, etc.
• 3-4 vine-ripened tomatoes – cut into quarters or eighths.
• ½ red onion – thinly sliced.
• 1 avocado – cut into wedges.
• 4 hard-boiled eggs - peeled and cut into quarters.
• 4 strips bacon.
For the Balsamic vinaigrette:
• ¼ cup Extra Virgin olive oil.
• 2 tbsp balsamic vinegar.
• 1 tsp Dijon mustard.
• 1 clove garlic – finely grated.
• 1/8 tsp kosher salt.
• 1/8 tsp freshly-cracked black pepper.
1. Add all vinaigrette ingredients in a small mixing bowl and whisk until emulsified.
2. Place bacon on a cold non-stick frying pan, set over med-high heat and cook until crispy (flip once). Transfer cooked bacon to a plate lined with paper towel to absorb excess grease.
3. Arrange greens, tomatoes, onion, avocado, eggs and bacon on a large serving platter. Dress with vinaigrette and serve.

Bring back the collard wraps!!! This is a Avocado Chicken Salad Collard Wrap made with baked chicken thighs, avocado, mayo, mustard, celery, green onion, pickles, fresh parsley, and wrapped in a steamed collard green. Full recipe below!
Avocado Chicken Salad:
1 medium chicken thigh, baked for 30 min at 350 and diced
1/2 avocado, diced
1 tablespoon avocado oil mayo
1 teaspoon mustard
1 stalk celery, finely chopped
1 stalk green onion, finely chopped
1-2 tablespoons finely chopped dill pickle
1 tablespoon chopped fresh parsley
Salt and pepper, to taste
Mix together in a large bowl, mashing avocado, until everything is combined. Slice the thick part of a collard green (1 large one for a big wrap or 2 small ones for 2 mini wraps) with a knife, horizontally. Steam over a pot of hot water to soften. Lay the chicken salad to the top of the collard, fold the sides in, and roll the wrap from the top, keeping the sides tucked.

Tag a Friend Who Would Love This Chicken Salad💥🥑😍
Take chicken salad to a new level with the addition of avocado. This naturally creamy chicken and avocado salad is healthy and contains no mayo or sour cream !🥗💥
2 medium cooked chicken breasts, shredded or chopped (we used rotisserie chicken)
2 ripe avocados, pitted and diced
½ cup corn (roasted, canned, or frozen)
¼ cup red or green onion, minced
2 tablespoons cilantro, minced (or parsley or dill)
2 tablespoons lime (or lemon) juice
2 tablespoons olive oil
salt and pepper to taste
In a large bowl, add the shredded chicken, avocado, onion, avocados, corn, and cilantro.
Drizzle with the lime (or lemon) juice, olive oil and season with salt and pepper. Toss gently until all the Ingredients are combined.
Notes: additional add-ins that go well with this salad include chopped tomato, chopped cucumber, bacon chopped and cooked, or black beans.

A day of what I used to eat!

🤔Would you think this is not healthy or not enough for a woman who lifts weight x4 and cardio x2 a week, 5’7’’ tall, 143 pounds, 32 years old?
Well the reality is; it LOOKS enough and healthy however, it surely wasn’t enough for me!
❌I used to consume 1400-1500 calories a day and workout 6x a week in order to keep losing weight! I was constantly hungry and always thought that there was something wrong with me and I was kind of ashamed when some of you were writing that I eat too much food and despite that I was still hungry! The reality is; I was eating high volume food so I could fight my hunger cues but they had not enough calories! Just lots of vegetables… Consuming only 100 g carbs and 40 g fat a day for over 7 months and then end up eating almost a whole jar of peanut butter at one sitting is not healthy! Honestly I always lived like this! Little food, too much exercise! Cause I’ve always had weight issues and it was a massive problem for me! I LOVE food and I LOVE eating! I am an exact definition of a person who lives to eat! Living like this was not something I wanted to do for the rest of my life! Lose weight by starving myself, gain it back by binge eating over and over again!!!!
✅ Now I am on a completely different journey with the help of my nutrition coach @lauriechristineking !! This is totally outside my comfort zone cause I consume almost double the amount of calories and workout not more than 4x a week however, I feel happy, energetic, I am overall a better human being, sleep better, way more productive and have better relationship with food!
🙏🏻I accept my body the way it looks right now cause I am healthier and happier inside! Aesthetics is not my priority at the moment! This journey will take a long time and I am ok with that too!! Cause the short cuts never end up well!
