@boldbajafresh saved me a number of times this weekend. Life on the road, far away from meal prep, can often lead to eating meals that are not the most nutritious and full of yuk yuk! But these salads.were nice and green, (I know that sounds weird but way too many places serve white lettuce,) and even had jicama!!

Meal prep for salads, my lettuce goes bad crazy fast here for some reason and I've tried everything to slow it down. I only get a couple days of lettuce before my "salads" become a crap ton of veggies. ➡️ for finished product which ended up way too big .
1. Add to a pan, 2 cups chopped mushrooms, 1 small diced onion, 1 tbsp minced garlic & 1 spoonful of beef stock powder, cook until softened.
2. Add 1 1/2 cups liquid chicken stock, simmer for 2 mins.
3. Add 1/3 cup cream & 1/4 cup milk of choice. Simmer for 5 mins.
4. Take half the soup and blend until smooth, add it back to pan and simmer a further 2 mins.
5. Plate and enjoy ❤️

How to do it👇
Combine cream (100g), fiber syrup (50g), sukrin gold (75g), butter (55g) and some vanilla extract in a saucepan and let simmer over low heat, whisking constantly until thickened (for about 25-35 minutes). Add ground ginger (1/2-1 tsp). Pour in a baking tin (with parchment paper). Let cool. Scatter sea salt over the caramel. Place in the fridge for at least 2 hours. Cut into desired shape. .
Blanda grädde (1 dl), fibersirap (1/3 dl), sukrin gold (1,5 dl), smör (55g) och lite vaniljextrakt i en kastrull. Låt sjuda på svag värme, rör runt då och då tills det börjar tjockna (ca 25-35 minuter). Tips, gör kulprovet; doppa lite av smeten i ett glas med kallt vatten. Går massan att bryta sönder men är lite seg är kolan klar. Tillsätt malen ingefära (0,5- 1 tesked; beroende på hur mycket ingefärssmak du föredrar). Häll i en form med bakplåtspapper. Låt svalna i rumstemperatur och toppa sedan med flingsalt. Ställ in i kylen i minst 2 timmar. Skär, med en vass kniv, till önskad form.

It is a super gloomy day here and I just can’t wait for the temps to drop even more (anyone else just LOVE when it gets super cold out? Just me? Okay).
Starting on my Thanksgiving recipes this week and I can’t believe how fast this year has gone by. However it is my favorite time of year (besides Christmas time) so I’m really looking forward to the next two months! I also can’t wait for all the new recipes.

Sweet and savory toast this morning 🍞 Had this exact same meal as a snack yesterday and having it for breakfast today 😎 My sweet friend picked me up some @erewhonmarket paleo bread after her trip to LA and I haven’t been able to stop eating it 😅 -

It feels like summer in San Francisco tonight, but I’m channeling aaall the cozy fall vibes with the colors on this plate 👏🏻🍂🍁🥰 (+ some green for good measure). Spicy garlic shrimp, creamy cauliflower mash, & sautéed garlicky greens + shrooms. Cauli mash Monday? Always here for it 👏🏻.
whatsonmyplate: SPICY GARLIC SHRIMP 🍤: season shrimp with @primalpalate ‘new bae’ seasoning (or any jerk or cajun seasoning) + paprika, then sauté in garlic ghee until pink and slightly brown) •• CREAMY CAULIFLOWER MASH 🍚 (recipe in my story highlights) •• SAUTÉED GARLICKY GREENS 🍃 (in a pan, heat 1 teaspoon @fourthandheart garlic ghee for a minute; add fresh spinach and sauté 10 seconds; quickly remove from heat and season with parmesan & red pepper •• sautéed garlic ghee mushrooms.
Gloomy days call for cozy bowls of oats. 🍂 I’ve not fully embraced the pumpkin flavors yet but that might be changing after this bowl.

▶️ @quaker PUMPKIN egg white protein oats
-1/2 cup rolled oats cooked on the stove according to package directions in 1 cup water — then added 1 tbsp chia seeds & 1 scoop @nuzest_usa vanilla clean lean protein (code KPINGITSIMPLE) + 1/4 cup egg whites — whisked til fluffy. Then I added 2 tbsp pumpkin purée and a ton of pumpkin pie spice.
Topped with banana slices, raisins, maple syrup, @georgiagrinders maple caramel almond butter, & walnuts
