Experimenting with some vegan/gluten free chocolate chip cookie recipes. This recipe by @cookieandkate was one of the better recipes I've tried so far! It’s been such a laid back Sunday, and it was exactly what I needed 💕🙌🏼 Windows open, rain coming down loud on the metal roof and I made my first curry 🍛 It’s a dish I love to eat, but I’ve been intimidated to try making at home. I went straight for a @cookieandkate recipe because I swear she never lets me down...there hasn’t been a recipe of hers that hasn’t been delish. So glad I tried it, Thai red curry will definitely be making its way into the fall & winter meal rotation. Do you have that go-to chef or food instagrammer that you when you want to try a new type of recipe? @halfbakedharvest is another one of my faves!!
I love a good Spanish paella 😍
The first one I ever ate was a seafood paella, which I had in a Spanish restaurant in Barcelona in Spain! You can’t get anymore authentic than that! 🇪🇸😁👌 And this is my first attempt at cooking a vegan-friendly vegetarian paella 🌱 Turned out pretty damn good if I do say so myself! Super simple to make actually, and full of flavour. Thanks @cookieandkate for the recipe 😊🙏 I think it could’ve used a bit more salt and pepper, and perhaps cooked a bit longer to get that socarrat (crispy bottom) that all paellas should have! Like I said, this was my first time making this 😅

Sunday’s are for baking 👩🏽🍳 seriously though, one of the ways I ensure there is as close to zero food waste from my kitchen as I can is to bake muffins using leftover fruit from the week that Nathan and I can take for work snacks during the upcoming week. Often these end up being banana muffins as we do have a few left over each week (mainly because Nathan is a weird person and only likes bananas when they are practically still green 🤢 as soon as they start getting spots he won’t touch them!). This week we only had a couple of bananas leftover (not enough for muffins) so I froze them for smoothies and instead decided to make apple and cinnamon muffins as we had an abundance of apples leftover! The recipe for these muffins is by @cookieandkate it’s her Healthy Apple Muffins recipe 🍏 they don’t have any refined sugar and there are options for vegan, dairy free and egg free muffins depending on your preferences. I didn’t have apple sauce so added in some extra coconut oil and some almond milk, they turned out perfectly, super soft, not dry at all and very flavourful! Got some leftover fruit? Google a recipe, tweak it for what you have on hand and get baking, saves unnecessary food waste, saves money and you get to enjoy freshly baked muffins, win win win👌🏽🌿

Guys this weird looking thing is so good!! Whole roasted cauliflower, infused with olive oil for an hour then basted with a turmeric spiced yogurt sauce and roasted for another half hour. Topped with parsley, mint, cilantro and pistachios. Craving pasta these days? Here, freshly roasted broccoli and bell pepper collide with lots of delicious sautéed spinach, linguine and some balsamic vinegar. Toss all that together with some magical reserved pasta water for a light, silky sauce. 👌💖 This recipe is highly adaptable. Feel free to change up the roasted vegetables—just use whatever you have around, cut to similar sizes and roasted until tender.✨✨

Friday breakfast! Last night I made almond walnut butter using a wonderful recipe from @cookieandkate that advises two important things: roasting the nuts and waiting patiently (and faithfully!) for the smooth creamy texture to materialize. I added some vanilla extract and a pinch of Himalayan sea salt and the nut butter is divine! 2 cups organic almonds and 1 cup organic walnuts from Heron Fox Farm. Topped with French honey 🍯 from our dear friends, a dab of @good_culture cottage cheese and a sprinkle of cinnamon.

Butternut Linguini w fried sage #cookieandkate
2 tbsp olive oil
1 tbsp finely chopped fresh sage
butternut or kabocha squash, peeled, seeded, and cut into small ½-inch pieces (about 3 cups)
1 medium yellow onion, chopped
2 garlic cloves, pressed or chopped
⅛ teaspoon red pepper flakes (up to ¼ teaspoon for spicier pasta sauce)
Freshly ground black pepper
2 C veg broth
12 ounces whole grain linguine or fettucine
Top with vegan parm (cashews, sea salt, garlic and onion powder)
This dinner made my day! It was easy, full of fall flavour, and something a little different (I don’t tend to cook with sage very often). Ease 9/10
Keeps well for leftovers 9/10
Made broccoli quinoa casserole tonight. Decided to add cauliflower and used panko instead of making my own breadcrumbs (because no one needs extra work when everyone's hungry!). #heartbreaker went back for seconds. Thanks #cookieandkate for this #vegetarian yumminess!
New recipe for brown rice from #cookieandkate . You use a bunch of water and just boil it uncovered. Dump out any excess water after a half hour and cap it for a few minutes. Really good. This is how I’m doing brown rice from now on. Way better outcome and easier to do.

I always thought making granola was super hard and time consuming. So when I my sister said that she wanted me to bring her some healthy snacks, I wasn’t going to show up with some carrots. She is obsessed with this recipe of granola and makes its all the time so I thought I would make it for her. You guys... I have been missing out. This recipe probably took 5 minutes to throw in a bowl and mix. Bonus: it’s healthy too. Its made with whole grains, unrefined oil and naturally sweetened.
There is so much that you can do with granola and it’s makes an awesome homemade gift. You can have it for snacks over yogurt, with milk, or just alone! Try it out and let me know what you think. Check out comments for recipe. ❤️ 📷 @cookieandkate

This vegetarian paella is a sweet cheat. You don’t need a paella pan to do this one, just a dutch oven. I had to omit the saffron and wine because I didn’t have any in the pantry, but it still turned out so good! @cookieandkate created this recipe. can you tell i’m on a corn kick? went to Linvilla Orchards yesterday and picked some fresh corn and peppers (green + habanero) and decided to make a corn salsa! recipe is from @cookieandkate although i made a few adjustments to accommodate what i had on hand. i let it sit overnight in the fridge to get all the ingredients good and marinated - it’s delicious! i won’t miss summer but i’ll sure miss all the sweet corn 🌽🌶
