We start the week with another savoury recipe in our Romantik advent calendar. Let’s try the delicious recipe “Beetroot with pumpkin cream, lentil salad and nuts” from our Romantik @hoteldeimann - Enjoy!
⭐️ Start with washing the lentils and leave them to swell
⭐️ Then peel the yellow beetroot and slice it into fine slices
⭐️ Marinate it with salt, sugar, vinegar and olive oil and vacuum it
⭐️ Cut pumpkin and potatoes into pieces and marinate them with salt and olive oil
⭐️ Put it in the oven at 140 °C and cook for approximately 20 minutes
⭐️ Then puree with vegetable stock to the desired consistency
⭐️ Season to taste with salt, pepper and Raz el Hanout
⭐️ Roast and mortar the nuts
⭐️ Finely chop herbs, onions and spring onions ⠀ ⭐️ Boil the Beluga lentils. As soon as they are ready, add the red lentils and drain
⭐️ Season the warm lentils with vinegar, salt, pepper, some brown sugar and the chopped herbs
⭐️ Peel the beetroot and cut it into thick slices, then sauté briefly and add the nuts (Alternatively, the beetroot can be breaded with the nuts)
⭐️ Season to taste and arrange.

Double Cut Pork Chop with Hoppin’ John (with @ansonmills Sea Island Red Peas & Carolina Gold Rice). Chop dry brined with @meatchurch Holy Gospel for two hours then cooked 135F for 4 hours in the @anovaculinary. Seared on a cast iron griddle around 750F for 60 seconds a side.

Homemade treats always make the best gifts 🎁 and these Peppermint Biscotti will surely be a hit. They're delicious AND easy to make, which is 🔑 at this time of year. Use the recipe below, and you can thank us later! 🥰
1. Preheat oven to 350 degrees.
2. In the bowl of a mixer, cream butter and sugar until fluffy.
3. Add eggs, one at a time, beat until incorporated. Add extract.
4. In a separate bowl, combine flour, salt, and baking powder.
5. Gradually add flour mixture to egg mixture, mix until dough forms and flour has been incorporated.
6. Turn dough onto a baking sheet lined with parchment paper. Form a rectangular log (or two logs, for smaller biscotti) about 12 inches long and 1 inch thick.
7. Bake until dough is a light golden brown, about 25 to 30 minutes. Cool on a wire rack for 10 minutes.
8. Using a serrated knife, cut the log(s) on the diagonal into 1/2 inch wide pieces.
9. Return to the parchment lined baking sheet, cut side down, and bake for an additional 10 to 15 minutes, until biscotti is firm.
10. Melt chocolate chips over slow heat. Use a spatula to spread chocolate over one side of biscotti, then sprinkle with crushed candy canes.
11. Chill until set, about 30 minutes.

Roasted oyster mushrooms and delicata squash, spiced seed and strand purée, picked and raw carrots.
With cold weather in full effect (even here in Florida!) as a chef, I start to crave winter vegetables. Roasted squash and mushrooms are the type of veggies that can almost eat like meat if treated correctly, and they are great ingredients to include on any winter dish.
For this dish I roasted the delicata squash and mushrooms hard in the oven to get nice crispy edges. But instead of just throwing out the seeds and fibrous strands that come out of the inside of the squash, I cooked them down with brown butter, warm spices, cream and buckwheat honey. Once puréed and strained, it created a beautiful silky sauce. This is a great way to use the whole vegetable and waste nothing.
With all these rich and hearty components on the plate, I added some pickled and raw carrots to add acid and crunch.

The very first meal the Mr. made for me was Gemelli with white sauce, bacon and peas. We were at his first apartment in NYC and it was a gloomy day. I took a picture of the food and I felt so special. I am still not a white sauce kind of girl but Gemelli became my favorite kind of pasta
I tried to recreate the pasta but ended up having to substitute pretty much everything except for the white sauce because my local supermarket wouldn’t cooperate

After gang violence in Honduras threatened her and her family, Melissa fled to the US with her father. ⠀
For three years she has been living, working and studying in the USA - all while struggling to fit in to a new language, culture and society. ⠀
Each day she comes to work remembering the days she used to cook with her mother back home.⠀
It's been four years since she has seen her mother. ⠀
But the work she does in the kitchen helps Melissa and her father send money back to their family in Honduras. ⠀
They are slowly but surely creating their version of an American dream - a dream of living safely away from unemployment, corruption, and violence in Honduras.⠀
Slowly but surely, Melissa and countless other immigrants are working to add to our collective, American story.⠀
