Happy birthday to my awesome mom! She got to coke visit for her birthday for the first time in a long time. Made her filet, lollipop lamb chops, old world potatoes, and a sinful cake. She could not have been happier and nor could I be for being able to pull the day off!
Plant based eating vs. veganism 101:
I say 101 because I’m not an expert, so this is just my thoughts on the topic. I will never try to pretend that I know something I don’t. And I love other people’s feedback so please feel free to add on!
So here we go.... To me, being vegan is a life style. It’s a way of being. It is living your life with out any animal products but also with out harm done to animals in the making of your products, living sustainably, being conscious of the environment in every decision, and the list goes on. And while this lifestyle is extremely enticing to me and is always goals, I’m not there yet and I don’t want to claim to be. That’s why my page is about plant based eating. I try to eat plant based foods as much as possible. Does that mean I’m 100% plant based or vegan? No. I like my page to be a place where I can show how someone can start on the path to plant based eating, and maybe eventually if they want to, to becoming vegan.
I like to show how it doesn’t have to be difficult to eat this way, both in cooking and in ordering out. I live an extremely busy life, as a Director of Nursing, time for myself is few and far between. But I signed up for it, and I love my job, so I’m not complaining. I just have to figure out ways to be quick and be conscious with food. You may not always get recipes from me on this page, but you’ll get a glimpse into what it’s like to live mostly plant based on a very busy schedule. And my hope is to give others some insight and some inspiration that maybe they’ll want to live this way too.
I ultimately want to live the most animal friendly, environmentally sustainable, health conscious way possible, but in life it’s about baby steps towards your dreams! Because I will never stop working on me, I will never stop working towards a reduced carbon footprint, and I will never stop caring about the important things in life. 💯💯

This recipes make 16 knots. The crust is salty and crispy. The crumb is soft and chewy. The making is easy. The eating is satisfying! Perfect pairing for any entrees!
1 tbsp sugar
30mL olive oil
3/4 tsp salt
3.5 cups flour
2 tsp instant dry yeast
70g melted butter
3 gloves minced garlic
1 tsp Italian seasoning
1/4 tsp salt
Add ingredients in the order above to your stand mixer. Add a tbsp a time if dough is too sticky. Mix on low for about 15- 20 mins. Dough should have formed a ball and not too sticky. Put some oil on your hand and form dough into a ball. Put dough into a greased bowl. Let rise in a warm place for about an hour, until doubled in size. Punch down dough and shape into a 16x5 inch log. Slice into 16 1-inch strips. Roll each into an 10 inch rope. Tie into knots and tug ends underneath. Let rise for 30-45 mins. Preheat oven to 400F. Mix toppings together and brush half topping on top. Bake for 20-23 minutes. Brush on the rest of the topping. Sprinkle with Parmesan cheese and parsley. Serve hot!

My parents did takeout from @mpnewyork and we got a whole array of fresh veg and meat/dairy and pantry staples! My parents asked me to put together a dinner for them and their friends tonight and here’s what we came up with....
• To start: herbed ricotta and asparagus flatbread
• Salad course: cauliflower, fennel, arugula with burrata and toasted almonds - dressed w a honey, lemon, Dijon vinaigrette
• PASTA: 🍝 can’t take credit for this - @misinewyork takeout, pasta and diavola sauce, bring on the spice 🌶
• THE MEATS: I mean this ribeye was BEYOOONDDD! Seared it for 2 mins each side in butter and oil - finished it in the oven for like 8 mins - medium perfection!
I can’t take credit for most of this, as it came prepped and I boiled/heated and just sautéed... that said I am AVAIL FOR HIRE..dm me lol

Creamy Cauliflower Rice Risotto. Guilt free and much healthier than the traditional kind... and guess what you don’t have to keep your serving size to 1/2 cup like with traditional rice or pasta. Recipe (Inspired by Paleo Nick): 1. Rice one head of cauliflower or purchase riced cauliflower 2. Start with 1-2 tablespoons of avocado oil on your skillet and add 1/4 chopped white onion and thin of chopped ginger 3. Allow that to simmer on medium-high heat and cook until the onion is translucent 4. In the meantime, thinly slice about one cup of baby Bella mushrooms and add to the skillet 5. Chop 1/2 yellow bell pepper and add to the skillet as well 6. Add a pinch of mushroom flavored salt (I love @falksaltusa), garlic powder, black pepper, and chili flakes if you’d like some spice (if not then skip the chili flakes) 7. Next, add in your riced cauliflower and turn your heat down to medium 7. For the creamy texture we’re going to use coconut cream here 8. Add about 2/3-3/4 cup of coconut cream and allow everything to simmer together on medium heat until all the veggies are soft and the cauliflower rice is cooked 9. Let everything simmer for about 12-16 minutes allowing the flavors to infuse your riced cauliflower 10. When your cauliflower is soft, remove from the stove and top with fresh cilantro 11.
