These homemade black bean tostadas keep me out of the hospital 🏥 cafeteria. What's the point in spending extra money when you can make simple stuff that's tasty and not too time-consuming.⠀

⠀ #Cabbage Slaw⠀
1 8oz bag slaw mix⠀
3 tbs Brine from jarred pickled jalapenos⠀
3 tbs fresh lime juice ⠀
1/2 cup Greek yogurt⠀
1/4 tsp garlic powder⠀
1 tsp honey⠀
Salt and pepper to taste⠀
⠀ #sauteed veggies⠀
1/2 onion, thinly sliced⠀
1 green, red, or yellow pepper thinly sliced ⠀
2 cloves of garlic, diced⠀
1 tbs lime juice⠀
1 tbs oil⠀
# black beans ⠀
1 15oz can black beans (preferably BPA free)⠀
1 tbs ground cumin⠀
Salt and pepper to taste⠀
⠀ #toppings ⠀
Sliced cherry tomatoes⠀
Preheat oven to 450 degrees ⠀
⠀ #cabbage slaw⠀
Directions - mix cabbage slaw with the jalapeno brine. In a separate bowl, whisk yogurt, honey, lime juice, garlic, salt, and pepper. Then combine the cabbage and the yogurt mixture.⠀

Add oil to a preheated skillet. Once the oil is 🔥, add the onion and pepper and saute for 5 minutes until the vegetables appear soft. Add the garlic and saute for another minute. Then add 1 tbs of like juice salt/pepper to taste.⠀

In a small saucepan, add beans and cumin, the heat on low to medium heat for 10 min.⠀
On a sheet tray, add a layer of beans on each tostada. Place the tray in the oven for 5 min.⠀
Top the bean tostadas with the slaw, sauteed veggies, and other toppings (cilantro, queso fresco, tomatoes, etc.)⠀

We encountered SO many amazing practitioners during our most recent conference adventure. We learn so much during the presentations and then those golden moments in-between, when we can connect with like minded practitioners, are moments of encouragement. Follow your internal compass!
My public service message: As a society, as “humans” let’s vow to follow the science and follow common sense. Always remembering what we learned in high school biology...heal the cell! When the cell heals, the whole system heals. Bring hope to those around you. Cultivate a clean environment around you (emotional, chemical, physical. Etc)

It’s so easy to look ahead and only see the many twists and turns you still need to make on your way.
Perform well on the DAT or NCLEX, get accepted to grad school, pass boards, find a job. The mindset “I’m not there yet” can become so overwhelming that it diminishes your motivation.
It’s okay to look forward to the big milestones in life. But we shouldn’t forget that it’s the process that fills our lives with meaning. It’s about waking along the way, one day at a time. Trusting the journey. Being present. Performing at your best.
Look back at your journey and be proud of what you have already achieved. Celebrate your accomplishments. Proudly remind yourself of the challenges you have overcome. Thank your journey for all the valuable life lessons it has taught you.
You may not be at your final destination just yet, but you’re definitely closer.
