In fact, if you go to France and order a steak at a bistro, it will most likely be serve with a sauce made with blue cheese. .What great is that you can use any type of blue cheese for this recipe. With @castellouk you can easily find the perfect one.
What's best about this blue cheese sauce is that you can control the amount of blue cheese that goes inside. I, for example, love to go heavy on the blue cheese because the salty flavours pair so well with the steak.
You can also use this blue cheese sauce as a dip for vegetables, fries and much more.

Here's what you'll need:
• 150ml (5 fl oz) double [heavy] cream
• 30g (1 oz) blue cheese
1. Heat the cream gently in a pan.
2. Crumble the blue cheese into the cream and let it melt slowly while stirring.
3. When the sauce is smooth, serve immediately.
Serve with steak, pork, vegetables, chicken or pasta.

My fridge and freezer is always stocked with this veggie loaded sauce. It’s so versatile, tasty, loaded with veggies and perfect for a quick meal. I’ve served this sauce to so many of my Son’s friends and they’ve all enjoyed it and I feel good knowing how wholesome it is. It’s a very forgiving recipe so if you don’t have a vegetable available use something you do have or leave it out. .
To make this you need:
1tbls oil, 1 small red onion, 2 garlic cloves minced, 1 grated zucchini, 1c grated butternut squash, 1 diced red pepper, 1 grated carrot, 1kg tomatoes (boiled and deskinned) OR 1 large tin of tomatoes, 1tbls tomatoe purée, 1 bay leaf, 2 tsps mixed Italian herbs, salt and pepper to taste. Optional: fresh basil.
Heat the oil in a pan and add the onion, garlic and bay leaf. Cook for a couple of minutes. Add all the other vegetables and cook for another couple of minutes. Then add the tomatoes, herbs, tomato purée, salt & pepper. Simmer for approx 30 minutes. Once down blend till smooth. If freezing let it cook before putting in the freezer.

2 large leeks, chopped + well rinsed
1/4 cup sharp cheddar cheese
4 tsps butter
Salt + pepper
Preheat oven to 400 degrees
In a medium cast iron skillet melt the butter on medium heat and saute the leeks until soft and fragrant - about 7 minutes. Whisk the eggs + salt + pepper in a large bowl and pour over the frittatas, allow to cook on the stovetop for about 2-3 minutes until the bottom of the frittata is cooked. Then sprinkle cheese over uncooked top and place in oven for 8 minutes until fully cooked through and lighltly browned on top. Cut into 8 pieces (2 pieces per serving for #ultimateportionfix )❤️💚🥄

Do you take supplements?
I do! Some I rotate between taking, depending on travel, time of year or if I am feeling off, but the 3 that I am almost always taking are:
Probiotics for gut health, immunity + my skin. I have a few brands that I like, but have recently tried Dr. Ohira’s and feel like I have already noticed an improvement in my skin.
Fish oil for optimal brain health and functioning + fight inflammation. When you are looking a bottle, flip it over - you want the EPA + DHA to be higher than 500 mg per serving. This is why I like Nordic Naturals, + the lemon flavor helps any of that fishy taste.
Multivitamin to help prevent mineral deficiencies. It’s not impossible, but with a primarily plant based diet getting all minerals can be challenging. If you are on a low calorie diet, or have been on birth control for a long time it can also make you more likely to be deficient. I love Garden of Life, because the ingredients are from real food!
Always a good idea to check with your health care provider if you are unsure which supplements are best for you!

Butternut squash morning smoothie because... fall is coming🍁🍁🍁The other day I roasted a butternut squash before freezing (can't skip this step😁). The squash makes this smoothie SUPER creamy. Here is what else I added to create this smooth and creamy nutrient-packed snack/ meal:
1 cup frozen butternut squash (roasted)
1 frozen banana
Few frozen mango chunks
1 scoop protein powder
1 tbsp almond butter
~1 cup water (may need adjusted depending on your blender and/or consistency you're after)

One of the biggest challenges of a lot of my clients is not planning ahead and not being prepared.
I had a client recently who came to me wanting to lose weight and felt her meals were pretty healthy. She didn't know where she was going wrong.
I had her write down her food intake for 3 days in great detail. We noticed almost every day she was at work, she was grabbing for something at the vending machine or cookies and muffins in the break room because they were around and easily accessible. It was really eye opening for her how much of these foods she was really having without even realizing it.
Eating these high calorie snacks every day was really hindering her weight loss efforts, despite having some really nutritious dinners AND getting up at 4:30 a.m. to exercise regularly.
We came up with a plan together on snacks she could bring into work and how she was gonna find a few minutes to pack them for the next day.
Once she did this, she was no longer tempted by all the snacks at work loaded with calories that didn't even fill her up. 🙌

For my group.
Is it always easy juggling 12 hour work days, a side business, 2 kids, exercise, cooking, laundry, making memories with the kids and not being a total lunatic ? Lol DEFINITELY not.
Do I wish I was naturally healthy with some crazy fast metabolism that I can eat anything, never exercise and POOF...energizer bunny in a Victoria secret body? Ehh maybe 🤣
But I dont wake up in that body with that energy and I definitely lose my cool every so often...I am real...I am human...and I struggle with choices daily just like everyone else (as I left 3 baskets of laundry in my room ready to fold🤷♀️). What I offer daily is hope.
Despite that late night with kids (1130pm last night😭zoey go to bed lol)
Despite that stressful day at work
Despite that unsupportive spouse or family member
Despite the grueling homework sessions where you and your kids are trying to figure out what the heck they want #firstgradeishardyo 🙈
Despite that you need to start for the first time or restart because life got in the way... BELIEVE that if you want to feel good but it feels daunting as hell to get into a groove...you aren't alone. I have a group of 100s of ladies right there with ya 😘
BELIEVE that while it won't always be easy and there may be fumbles along the way, it will always be worth it😘

Heading to the apple orchard is a favorite Fall pastime for most us in these parts.⠀⠀⠀⠀⠀⠀⠀⠀⠀
We have many orchards around us so we make at least one trip a year. And, if you're lucky, not only will you be bringing home some delicious apples, but you will be toting a bag of warm apple cider donuts as well. I bet you can smell the cinnamon sugar right now - can't you?!?!⠀⠀⠀⠀⠀⠀⠀⠀⠀

GROCERY HAUL! 🍎🍊🥗 $55.85 spent at @aldiusa this week!
If you didn’t see my stories (they’re up for a few more hours) - @aldiusa sent me a giant box full of some of their favorite products. WHY? Probably because you guys are always liking my grocery haul posts, so THANK YOU. They reached out to me here on Insta & ain’t no way I’m turning down free food. 😂
Also, did an awkward taste test video of the pumpkin spice latte stuff in the top right corner. Verdict? 😍😍😍 Not too sweet, very pumpkin-y, and also good coffee flavor.
Anyways - here’s the plan this week. SIMPLE as I ease back into post vacation life. 👇🏼👇🏼👇🏼
🍎 Greek yogurt w/ Apple & granola for me.
🙅🏻♂️ Night shift means sleep for him.
🥗 Salad kits for me 👉🏼 we have tons of frozen cooked meat, like chicken & pork. So I’ll be adding some protein to my salad each day.
🍱 Snack packs for him 👉🏼 this week will have crackers, hummus, sliced bell pepper from our garden, orange & HB egg.
🍔 Chorizo Elk burgers w/ grilled brussel sprouts 👉🏼 gonna top these burgers w/ guac, because 😍.
🌮 Pork tacos 👉🏼 froze some leftover smoked pork before vacation so this will be an easy dinner.
🐟 Grilled salmon w/ potatoes & grilled peppers from the garden.
🍕 Pizza 👉🏼 I ALWAYS keep one in the freezer for emergencies or a quick dinner.

Finally tried @misterfreedtortillas at the weekend, they are sooooo good! Definitely recommend if your missing cheesy tortilla yum 😋
Chicken & Cashews
1 cup coconut aminos
1 tblsp ghee
1 tsp ginger (squeezable - so easy)
1 tsp minced garlic
Whisk together to combine
Slice 1 on of chicken breasts into strips
Toss in tapioca flour to lightly coat
Salt and pep
In pan/wok heat 1 tblsp oil - duck fat/olive oil/avocado oil
Cook chicken till almost cooked through
Add 1 tblsp ghee to chicken, mix to thicken
Add 1/2 of the sauce + 1 cup cashews
Shopped in my backyard for dinner. Turns out that my sheep likes parsely, but luckily there was a bush that she didn't get to. Also collected garlic and basil to add to the dish. All these herbs made a simple but flavorful pasta, especially when paired with @sanremopasta spinach fettuccini. Nothing beats fresh herbs and this was slurped down quickly!
A Sunday dinner for two, or three or a house full . One pan, prosciutto, swiss cheese chicken breast, with creamed spinach and potatoes,
,Quick, easy meals are my favorite way of cooking.
Here's a tip you can brown it on the stove top, finish it off in the oven using ovenproof saute pans. This is one of those meals, that looks like it took hours to prepare but comes together in 30. Restaurant style recipes.... simplified for the home cook.

Astrid’s been eating really well the last couple days. Each meal she’d have about 45g - 50g of food. We really like Wattie’s baby food. It’s so easy and has very simple ingredients. Especially this “first tastes” line, is designed for babies who just start solids. Astrid finishes the pouch within 2 meals. So far we have tried pear, apple, yellow veggies, orange veggies, and green veggies. I’m sooooo proud of her doing so well! .
Don’t let this picture fool you. Swipe to see the young coconut that got the best of us this weekend lol. Making homemade coconut yogurt was a fail but we’ll try again. First we had grandiose ideas of having six or seven servings of yogurt from one coconut. It was barely two lol. And the texture was gritty. As you can see a lot of berries and granola saved the day. "Spaghetti" and "meat"balls... One of my all time faves! Made super modern through the use of zoodles, and @eatynomeaty Italian mEatballs!
There is NEVER anything wrong with pasta... EVER!! Carbs are amazing. I just didn't feel like proper pasta tonight, so I made zucchini noodles instead. As for the meatballs, the texture and flavour were bang on, but it definitely was not what I was expecting visually... See my stories for a full review 👌

4 day meal prep done and it’s all breakfast foods🤷🏽♀️Breakfast is proffee. Second breakfast is yogurt with .5oz granola. Lunch is 4oz sausage, eggs, onion, and cheese scramble. Afternoon snack is a #2ingredientdough bagel with cream cheese. Dinners will be cooked each night and I’ll make sure there’s veggies in it😬
This week I’m making it a goal to be active at least 4 times whether it be the gym or walking outside.
