Pasta bolognese over spaghetti squash is a wonderful, healthy meal in this cold weather.
I start with @inagarten recipe for bolognese with a few changes. I use 96% lean beef and I leave out the cream. A good wine adds all the flavor to this.
I never did post my last two soup recipes 😱 oh the horror lol. This one was delicious even if it didn’t photograph well 😂 I did the Moroccan Lentil Soup from eatingwell.com I love getting extra lentils in my diet especially when they’re spiced so lovely

Today has been an endless series of much needed distressing. Slept in, drank a nourishing fruit smoothie, read a little, went on a 3 mile hike with my boyfriend and our puppy, and fueled our bodies after with a hearty lunch. To top it all off, we’re heading to the NC State Fair tonight for the FIRST time ever!🎡 I often forget that when I’m feeling overwhelmed, I need to remind myself to take a break from the madness and regain my inner peace. Mushrooms are not universally loved in my household. My husband and I love them but most of the kids are so skeptical about them. Doesn’t stop me from cooking with them though. They just pick them out and put them on my husbands plate. Win win for everyone 👌
Skillet Chicken with Mushrooms in Lemon White Wine Herb Sauce 🌿
2 lbs boneless, skinless chicken breast
1/2 tsp salt
1/2 tsp pepper
3 tbsp flour
2 tbls olive oil
4 tbsp butter
1/2 cup white wine
1 cup chicken broth
Zest and juice of a lemon
1 10oz pkg mushrooms sliced
1 small onion chopped
4 cloves garlic chopped
1/2 cup parsley chopped
3 Sprigs fresh thyme
2 sprigs fresh rosemary *

I based this recipe off my healthy apple pancakes, but we’re using pumpkin instead of apples for another fall flavor. It’s a close call, but I think this pumpkin version might take the cake (or stack in this case!). Especially with a little pb and maple drizzled on top. 💁🏻♀️
They’re super simple to whip up. All you have to do is toss the ingredients into your blender to mix and pour directly into the skillet for cooking. 🙌 Top with a little nut butter and maple syrup and voila -- you’ve got yourself a decadent, powerhouse breakfast! ⠀⠀⠀⠀⠀⠀⠀⠀⠀

One pan nachos💃🏻 made these last night & they were💯I used the last bit of prepped crockpot bbq chicken and then loaded them up with all the toppings. when I prep things for the week, I always try to find a few different ways to switch it up to keep it same but different🙆🏻♀️the last two things I posted being just that & both don’t take much time to throw together💥 happy friday! 💛
for the nachos, I just used @sietefoods sea salt chips + bbq crockpot chicken + tomatoes + red onion + shredded cheese + chopped cilantro & red pepper flakes. place in the oven at 350 for 7 minutes or until cheer is melty. then top with avocado, jalapeño & @traderjoeslist jalapeño sauce🙌🏻

Leftover Tuscan beef casserole for dinner tonight with peas and cheesy cauliflower patties..
Recipe for the Tuscan beef casserole is on Slimming Eats (link in profile).
For the cauliflower patties it was 1.5 cups of leftover cauliflower mash, mixed with 30g cheddar, 30g Parmesan, 1 egg and two chopped spring onions, season well.Form into six patties, place on parchment lined tray, spray over top with spray oil and bake for about 35 mins at 200c/400f until lightly you golden.
Love making sweet potato sliders for an easy dinner😍I prepped some bbq chicken for the week & used that in between japanese sweet potato rounds & it hit the spot🙌🏻 next up, using the bbq chicken to make some nachos! ill share when I get home tonight😎 hope you have a great day! .
for the shredded bbq crockpot chicken, I added 2 chicken breasts + 1 cup bbq sauce + 1/4 cup apple cider vinegar + 1 tbsp worcestershire sauce + salt & garlic powder. then roast the sweet potato rounds at 400 for 17 minutes on each side. top each round with a little romaine lettuce, bbq chicken, red onion & green onion😋

The temps have dropped, I’m not wobbling down the steps anymore from race day, it’s going to be a good day💃🏻 except it’s going to be back in the 90s this weekend, but I’ll take it for now 😅 I always love a good bowl of stovetop oatmeal but even more when it’s cooler out🍂 happy wednesday! .
