‘tis the season of soup !
I have been loving soup lately with the changing of seasons .
Here in Oregon the rain and snow has begun . This makes me want warming foods that make me feel cozy .
The other week I made a tasty soup with these ingredients ; mushrooms , ginger , garlic , green onion , shallots , and bok choy (not pictured) , rice noodles (not pictured) .
The other night I made another yummy soup with all of the produce that needed to be eaten or tossed out . I used an old onion half , garlic , the end pieces of some old green onion , a few wilting bok choy leaves , and some frozen veggies . I sautéed them , added veggie broth and a can of coconut milk . Once it was boiling I added in the rest of the rice noodles I had .
Soups are the best when you want to use up your veggie scraps before your next grocery haul .

While I try to always buy organic (and local when available), there are still certain fruits and veggies that I won’t splurge on. If you don’t want to spend a ton of money on organic produce, the best rule of thumb to follow is “the dirty dozen.”
This list includes the top 12 veggies and fruits found to have the highest amount of pesticides. I just checked online to see if the list has changed, and here’s what I found.
As of 2019, the #dirtydozen list includes strawberries, spinach, kale, nectarines, apples, grapes, peaches, cherries, pears, tomatoes, celery, and potatoes. 🍓🥬🍏🍇🍑🍒🍐🍅🥔
I’m surprised carrots didn’t make the list as they seem “dirty” to me. 🤔 I’ll probably still buy them organic because I’m paranoid 🙈

KETO CREAMY PARMESAN GARLIC MUSHROOM CHICKEN 🍗🍗
4 boneless, skinless chicken breasts, thinly sliced
2 Tablespoons Olive oil
8 ounces sliced mushrooms
Creamy Parmesan Garlic Sauce:
¼ cup butter
2 garlic cloves, minced
1 tablespoon Almond flour
½ cup chicken broth
1 cup heavy cream or half and half
½ cup grated parmesan cheese
½ teaspoon garlic powder
¼ teaspoon pepper
½ teaspoon salt
1 cup spinach, chopped
In a large skillet add olive oil and cook the chicken on medium-high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate. Add the sliced mushrooms and cook for a few minutes until tender. Remove and set aside.
To make the sauce add the butter and melt. Add garlic and cook until tender. Whisk in the flour until it thickens. Whisk in chicken broth, heavy cream, parmesan cheese, garlic powder, pepper, and salt. Add the spinach and let simmer until it starts to thicken and spinach wilts. Add the chicken and, mushrooms back to the sauce and serve over pasta is desired.

Tonight I made this 5 minute meal that is full of fall flavor! 🍁 😍The sweet potatoes at the store lately have been massive. I really did not feel like cooking tonight but this was seriously SO FAST. .
I feel like I should also explain that I eat small meals every 1-2 hours, so this portion size is perfect for me. I consume most of my calories in the morning with a ton of different fruits, eat mostly raw until lunch, and gradually through the day shift to more vegetables and cooked foods in the evening. .
1. Pierce a large sweet potato with a fork and steam or microwave for 5 minutes
2. While the sweet potato is cooking, drizzle olive oil and garlic in a pan. Sauté fresh spinach with the garlic and oil until wilted. Add some dried cranberries at the end just to soften them slightly.
3. Cut the sweet potato in half and stuff with your filling! That’s it, it’s THAT simple 😊 .

It's my twelve year veganniversary today! Twelve years ago, on this day, I made the best and most important decision of my life. Twelve years ago, I made the choice to align my values with my behaviours, and to live a compassionate and meaningful life. I chose to open my heart and mind to what was going on in the world around me. Twelve years ago I dedicated my life, my work, and my heart to animals. And despite the heartbreak that comes along with this work, I wouldn't change my decision for anything. I have lost some of myself throughout these twelve years; animals I have watched suffer and die have taken pieces of my heart with them, pieces of me that I will never get back. But I know that those pieces of me are in good hands, or hooves, paws, fins... I know that, wherever they are, those animals have kept that piece of me with them, and that in itself makes it worth it. And I would rather carry the heartbreak than pretend what's happening to animals is not their reality. I would rather be aware and fight for change than take part in the oppression of animals simply because it's a lot to bear. What we feel as activists will never compare to what animals suffer through each and every day of their lives. And despite the loss, I have also gained so much. I have experienced the love and affection of so many animals who are living ambassadors for those who are no longer with us. And I have learned so much from them: forgiveness, trust, and unconditional love. I have seen true beauty through them. So, until every cage is empty, until every tank is drained, until every animal is free, I'll be fighting for them, because it is the least that I can do. It has been the most meaningful twelve years of my life, and the only regret I have is that I didn't go vegan sooner. Matcha soufflé pancakes is my guilty pleasure! Indeed any desserts with #matcha just calls my name 🍵. I’ve tried many times making the Japanese soufflé #pancakes and I tried to minimize intake of baking powder. Lately I finally nailed down the minimal amount of baking powder. Six years ago, two sheep passed through the same slaughterhouse—but only one survived. The first, fearing for her life, managed to escaped her confines and take to the streets. When a local rescuer learned that this determined sheep had been captured and returned to the slaughterhouse, he pled for her release; the owner agreed, but gave him a different sheep—Aysha—instead.
When the rescuer realized the mixup, he tried to negotiate for the original sheep in addition to Aysha, but she was already gone.
Understandably, Aysha was terrified of humans. When she met the other sheep at Farm Sanctuary, though, she began relax. Now, instead of running away when we approach, she will comfortably maintain eye contact ... from a respectable distance.
