Korean Chicken Porridge // Aka Dak Juk.
Much like Congee, soaked rice is cooked down slowly until creamy in homemade chicken broth. Homemade stock/broth generally has a lot more fat than shop bought stock, which really helps creating the creaminess we are after. Often made the day after Dak Baeksuk - Korean chicken soup to you and I, in order to use up leftover meat and the broth.
I like to sauté some finely chopped vegetables as my base at the beginning but keep the seasoning fairly bland, as my homemade broth already has so much flavours from the aromatics I use in them. It is great way to use up leftover roast chicken meats and bones.
My take on Korea’s much loved dish has garnishes of fried garlic, spring onions and raw egg yolk to elevate the whole thing sumptuous and beautifully silky.
