Here’s a little something for fish Friday... I posted a few weeks back about how I struggle to get my 6 old to eat salmon yet he loved my salmon & watercress tart. So I thought I’d be brave, strike while the iron’s still hot and try some fillets again last night.
Made this delicious recipe for Sticky Orange Glazed Salmon from @_tattedchef and @bbcgoodfood orange, fennel & rocket salad. Not only did my son devour the entire salmon fillet but also loads of fennel too. I think the sweetness of that sticky glaze really helped, he was licking the plate afterwards 😆, in fact we all were.

Firefish is perfect for any nano tank! This small specie doesnt like to be with big large communities as they are prone to be eaten by larger fishes like triggers. One thing you need to have before getting these are tank covers. Without covers, these jumpers will definitely find its way out in no time.

5 things I've learnt in 5 days from doing my own research
1. Do not listen to half the crap on fb groups, do real research
2. Quarantine new fish before entering main tank or treat all fish as if they are diseased
3. Changing environment in one hit can cause severve stress e.i taking out all ornaments after 3 years and replacing with artificial rocks
4. Raising temperature because that is all you have been reading on every fb group over the years to get rid of whitespot, but all that does is speeds up life cycle processes causing it to fall of the fish and reproduce double and come back with a vengeance
I remember fishing with my dad, and though he doesn't catch big fishies I remember getting excited over this smol fishy he caught one time. We took him home and I named it fishy. It was a nice happy memory I've been recalling recently.

Mum keeps joking that we should make a lockdown cookbook of all our favourite recipes we have cooked over the last few months and if we did, this would definitely be in it.
Baked whole Sea Bass with roasted red peppers, tomatoes, anchovies & potatoes from @chefrickstein
✔️ a good pinch of saffron
✔️ 900g potatoes, peeled and cut in to 1cm slices
✔️ 4 plum tomatoes, skinned and cut in to quarters
✔️ 50g anchovy fillets in oil, drained
✔️ 150ml chicken stock (or water)
✔️ 4 red peppers, each one seeded and cut in to 8 chunks
✔️ 8 garlic cloves, each sliced in to 3
✔️ 8 small sprigs of oregano
✔️ 85ml olive oil
✔️ 4 whole sea bass
✔️ salt and freshly ground black pepper
Pre-heat the oven to 200°. Place the saffron in a teacup, pour over 2 tablespoons of hot water and leave to soak. Put the potatoes in a pan of boiling salted water and pour boil for seven minutes. Drain well and arrange them in a narrow strip over the base of a large roasting dish large enough to hold the seabass either lengthways or diagonally. The potatoes should form a bed for the fish, leaving plenty of room on either side for the red peppers.
Scatter the tomatoes and anchovy fillets over the potatoes, then pour over the saffron water and stock. Scatter the pieces of red pepper down either side of the potatoes and sprinkle over the garlic, oregano sprigs and Olive Oil. Season everything well with salt and pepper and bake in the oven for 30 minutes.
Slash the fish 5 to 6 times down each side and then slash in the opposite direction on just one side to give a criss cross pattern. Rub generously with some olive oil, season well with salt and pepper and then rest on top of the potatoes. Return the dish to the oven and bake for a further 35 minutes, until the fish is cooked through, serving immediately.

My Recommended recipe (by @Justin_mw )
1️⃣ Brine it. The first step is to brine the salmon with a simple 2 to 1 ratio of brown sugar and kosher salt for 1 to 2 hours, then wipe off excess liquid with paper towels.
2️⃣ Prep the smoker for indirect heat smoking at 225° F with alder wood chips for smoke. Place the salmon skin-side down on a piece of foil and transfer to the smoker. Smoke it until the internal temperature reaches 140° F.
3️⃣ Rest it for 5 minutes and enjoy
