Tried Bar Iberico in Nottingham on Monday night. We went for the menu Rapido, recommend doing this it’s really good value for money 💵 (make sure you check online as there is only specific times you can get this option). Here we have Here we have Chilli Prawn Pinchos, Piquillo, Lime & Coriander ⏩ Pork Belly Pinchos, Apple, Cider & Pickled Cabbage ⏩ Padron Peppers (there were an extra but seriously a must try! They were amazing 🙌🏻) ⏩ Crispy Chicken & Spicy Jerez Sauce ⏩ and last must but no means least, in fact they were so good I had to put up 2 pictures 😆 Crispy Cauliflower, Ginger, Chilli & Smoked Almonds! That ingredient combination is just 😍 The portion sizes of the peppers, chicken & cauliflower were HUGE and between the 2 of us just couldn’t manage it all. The Pork Belly & Prawns were smaller just on 2 skewers but just the perfect amount as they were so rich. Worth baring in mind the Rapido menu comes with warm bread & balsamic/olive oil dip too. I filled up on this too much as it came out first but I had no idea the portions would be so generous. Want to go back already, dreaming of those peppers at 9am in the morning so yes I would 100% recommend! 😆👍🏻

Zivot je pun uspona i padova. Bazdareni smo tako da bolje registriramo padove, da nas boli kada tresnemo na tvrdi beton. Wipe that slate clean! Despite not getting anywhere near the result I hoped or planned, I'm still cracking on. For me it's so easy to think I didn't achieve the result so let's write it off. But determined to keep trying and get my body working correctly again, as it's not playing ball at the moment 😂 Had an on meal yesterday, so got leftovers for lunch at work. And started the day with 40g chocolate weetabix (hex b) and almond milk (half hex a), with a little bit of sweetener and blueberries and strawberries. I've got leftover chilli defrosting for tonight, so feeling very prepared for an on plan day!

Baked Energy date cookies with healthy protein- packed ingredients. These healthy energy cookies are vegan, can be gluten free (just omit bran) and make the perfect quick breakfast or high protein snack.
1 cup oats
1 cup bran
2 Tbsp flaxseeds
1/2 cup cocoa powder
1/4 cup coconut sugar
2 Tbsp hazelnut oil
2 Tbsp peanut butter
2 Tbsp chia seeds
1 tsp baking powder
1/2 cup dank chocolate chips
1/2 cup whey
To a food processor add oats (use gluten free oats if you have a gluten intolerance), ground flaxseed and all dry ingredients. Pulse the food processor 5-7 times until oats are finely ground.
Add dates, peanut butter and oil .Pulse the food processor 5-7 times until dates are finely chopped.
Add whey to the food processor. Continue to pulse mixture until it forms of a ball or dough like consistency.
Transfer mixture to a large bowl, add chocolate chips if desired. Form cookies using your hands
Place cookies on a baking sheet and bake for 10 on 350 F.

I followed the package instructions for the bread, but decided to add a sweet and crunchy cinnamon streusel to spruce things up a tiny bit. The streusel is made with almond flour, coconut sugar and pecans so the loaf is still #grainfree#glutenfree#dairyfree and 100% delicious. It's so good straight from the oven, but I've honestly been loving it EVEN MORE cold from the fridge. The topping hardens up and it's so darn good. 🙌
Here's the recipe:
∙ 1 box Simple Mills pumpkin muffin & bread mix
Cinnamon Streusel Topping
∙ 4 Tablespoons coconut oil, solid
∙ 1/2 cup almond flour
∙ 1/2 cup coconut sugar
∙ 1 teaspoon cinnamon
∙ 1/3 cup chopped pecans
Make the cinnamon streusel topping by combining all the ingredients in a bowl, using a fork to blend in the coconut oil. Follow package instructions for the pumpkin bread and pour 1/2 of the pumpkin bread batter into a lightly greased 8x4-inch loaf pan. Scatter 1/3 of the cinnamon streusel mixture over the batter. Pour remaining pumpkin bread batter into the pan and top with remaining streusel. Cover with foil and bake for 30 minutes. Remove foil and bake for another 30 minutes or until a toothpick comes out clean.

It’s approaching the year 2020. We have amazing modern day technology , yet we still seem to make our lives and world difficult with the amount of excessive plastic / pollution rubbish in our environment!
Mother Nature is extremely smart in the way she designs food from the result of the soil - nutrients - water and minerals and the sun - cellular energy - photosynthesis. It even creates its own protection to secure its stored biomass being glucose in this case of a sweetcorn. The same can be said for a variety of produce.
However, many manufactures / producers want to focus on vast profits. Some consumers want the ease of having everything prepared as “too busy” is commonly thrown about, without using a knife or a chopping board 😂, which takes a few minutes and deal with the waste as compost.
I laugh further, when supermarkets decide to halve the sweetcorn further and then add wooden skewers then further increase the price / profit to accommodate the above behaviour and make us perceive its “normal” to have everything prepared!
Unfortunately, it’s not! Same with any food for that matter. Try cracking open your walnuts, or pin boning a salmon fillet, breaking down a chicken carcass or making your sourdough bread or polished white rice or gluten free pasta.
The food industry makes our lives easy, which I get and can appreciate but it’s at the expense of their mercy BUT also the expense of unnecessary packaging of items that don’t even need such things. It’s ridiculous. I would love to see the removal or laws in place for these redundant food procedures!
Additionally, support your local greengrocers, farmers market, or buy unpackaged food and make your voice heard!
