Chicken Tacos with Guac (not in picture)! ⠀⠀⠀⠀⠀⠀⠀
Taco Tuesday baybeee!!! With so many toppings I’m sure you can’t see the chicken, but trust me when I say it was oh so yummy!! ⠀⠀⠀⠀⠀⠀⠀
Normally I pan fry my chicken for tacos, today I slow cooked them in store bought salsa ( #pcosfriendly obviously), and the chicken was super juicy! ⠀⠀⠀⠀⠀⠀⠀
Also I toasted my @sietefoods Cashew tortillas on an open flame for the charring. Added coleslaw for the crunchiness. For the longest time, I wasn’t a fan of coleslaw. I always had them at restaurants and never seemed to enjoy them. Now that I’m making it myself, I know how much acidity I need for the perfect crunchiness and I can eat slaw erryday now!! ⠀⠀⠀⠀⠀⠀⠀
I still can’t believe its been more than 6 months since I started this journey of working on myself, and I’m kinda proud for sticking to it. Looks like I’m here to stay this time! #InItToWinIt#BringingMyAGame

Birthday dinner for the other half....literal food heaven. I only had 360ish kcals during the day but won't even attempt to guess the amount of calories this added up to. I'm sure I hit my protein target at least! 😂
Starters - trio of tuna tartare, beef brisket and tamarind chicken wings.
Mains - beef wellington with truffle mash and bone marrow sauce.
Dessert - chocolate fondant, cheesecake and pineapple carpaccio with kiwi with salted caramel ice cream, raspberry sorbet and coconut ice cream.

Sono andata dalla psicologa questa sera ed è andata bene! Questa volta non ho nemmeno pianto ‼️.
Abbiamo parlato un po’ in generale, ma la cosa più importante è stata un’altra... abbiamo deciso che io devo andare da un nutrizionista. Domani stesso si mette in moto per cercarne uno ☝️ che sia vicino al mio paese per evitare di fare un’ora e mezza di macchina 🚗. Si, in questi giorni ho mangiato normalmente ma no 🙅🏻♀️ non è sempre tutto rose e fiori e quindi non sempre va tutto bene... infatti ieri sera crisi 😞.
Abbiamo parlato di un altro argomento importante che per il momento preferisco tenermi per me, ma posso dirvi che mi ha dato un compito da fare... ovvero scrivete una lettera ad una persona a me cara che purtroppo non c’è più. Mi ha detto che devo iniziare la lettera così :” Cara x, ti voglio bene ma” e proseguire, finire come voglio. Devo fare tutto ciò solo se me la sento altrimenti lo faccio più avanti.
Questo è il succo dell’incontro 😅...
Sono un po’ agitata 😬, emozionata 😄 per il nutrizionista... staremo a vedere come va! Vi tengo aggiornate.
So here’s the T... Having a gorgeous little girl has been bloody amazing, but it’s been bloody hard in equal measures. Maternity leave is like an endless cycle of washing bottles, changing nappies and being woken in the middle of the night, and going back to work after 6 months was brutal. I was no longer a priority and my weight loss journey took a complete backseat. I’m embarrassed to say that, despite being in spitting distance from target only 18 months ago, I have gained nearly all of the 7 stone that I had lost. However!!! I’m now in a place where I feel in control of my routines, and that food optimising will finally fit into my life again, and I’m very excited about that! I’ve swallowed my pride and rejoined my old group, and feel so relieved to have finally taken back the reigns of my health! Dinner tonight was left over bolognese that I turned into chilli. Served with rice.

Feeling good to be back in control, and if I feel like I need something sweet then I’m going to go brush my teeth to stop me!
Todays food... (well the good food 🙈) Had a late start so breakfast was brunch... two eggs scrambled with a little milk and a teeny bit of butter. Had to use the microwave in the utility room to make them because the kitchen is a bit out of bounds in the daytime with all the men walking through it carrying doors and bits of wood and the decorator propping everything up against everything. So Micro it was.... actually the egg turned out really nice... the butter helped it not go too dry. So popped that on top a slice of m&s wholemeal bread with rye (with light spread) 4 sp
Didnt have lunch but got persuaded to try some spinach and gruyere cheese pastry straws... ended up eating them... 🙈 wasnt a whole packet but the carpenter had them leftover from the weekend and brought them in for me to try. So as I ate them all I thought best not to have lunch... 😬 Dinner this evening was 50g tagliatelle with king prawns and a mix of finely chopped broccolini, shallots and seasoning. I added a little oil from some olives we bought from a turkish stall in a market in skipton... and then remembered we also bought some fresh homemade feta cheese from the same stall so I used 20g crumbled over the top. Was just right for the flavours... so I worked out this meal was 9-10 sp
I also succumbed to having another M&S yum yum as they were still hanging around... 🙊 10 flipping SP... 😩 Never mind.... hopefully now i am eating less than the holiday and the mini break, that the pounds will still come off... even with cheese straws and yum yums... .
Heyo peeps. I got nothing new for you in terms of bingeing (still failing, you know the drill by now). I’m going to a neuroscience conference in Chicago this Friday until Wednesday, which I’m super excited for! I signed up to go to some talks about neural mechanisms underlying eating disorders so that’ll be interesting (hope I don’t get too triggered haha...). Also will be seeing two of my friends there that I haven’t seen in forever, which I’m both happy and nervous about since the last time I saw them I was about thirty pounds lighter than i am now :(. In fact I had to order new clothes for this conference because none of my formal attire fits me even remotely anymore and I really don’t think wearing large T-shirt’s and loose shirts would be appropriate. Feeling super self conscious and down on body image lately. On the up side, my university is essentially paying me to miss class and try all the cool foods in Chicago (all my expenses are paid for during my trip), so you bet I’m going to milk that for all it’s worth hehe.
Day 9/30 | Spent our public holiday indulging with the loveliest drip coffee and creamiest burnt cheesecake from @sundaycoffeeandcakes. It was also a day of lotsa eggs while working on deadlines and commissions 🍳

Just another series of my QUICK & EASY snacks for on the go! 🙆♀️
I was going to call this sweet snacks ( because 5/6 options are sweet) but this week one of my fav snacks has actually been the crispy chicken! 😂
These are all so quick and easy to prepare, and are great for when you need a quick snack that is easy to eat 🙆♀️ for actual videos and more quick snack ideas- check out my YouTube channel “ wholesome_lee” 🤪( I just started it! ) ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Here is what i am snacking on this week👇
1. 🥞 Protein pancakes: recipe on www.wholesome-Lee.com! These are so easy to make and are delicious for OTG snacks
2. 🍮Chia pudding: great as an overnight snack. I take 3 tbsp chia seeds, 1 cup almond milk & 1 scoop protein powder and leave it overnight.
3. 🍑 Peaches & ‘cream’: I chop one peach/ nectarine, and enjoy it with a huge dollop of Greek yoghurt!
4. 🍏 Apple & chocolate PB: I slice one apple ( and squeeze lemon over it to prevent it from going brown) or you can just leave it uncut. I then take 1 tbsp PB and mix in 1 tsp cocoa powder and honey to taste.
5. 🍗 Crispy chicken strips: these are so delicious and I often make them for dinner! I make my own chicken schnitzel by coating chicken in a mix of whole grain bread crumbs and oats. I then bake it and serve it with my home-made tomato chili sauce
6. 🍪 Mini cookies: SO FRIKKING GOOD. Recipe on www.wholesome-lee.com!!!
