A warm bed of smooth and fluffy coriander pulao, topped with a mildly spicy chicken fry is a combination that defines comfort food for me. This dish is packed with herbs and spices yet amazingly mellow. It’s like rolling in a warm fuzzy blanket on a cold winter night - nothing can explain that moment of instant satisfaction!
is in making round god-damn dosas. One can’t imagine how many dosa batters would have gone down the drain (and in equal measure in the garbage) trying to make these. After all, it has a history that stretches more than 2000 years - clearly I wasn’t going to make any of these for some time now. But people who know me know - I love South India and every thing that comes with it. Swaying trees, warm people and warmer climate - and the food there is simple, eclectic and aromatic like none other. So off I go to make another batch of dosas - coupled with yet another session of indignity and abasement. Only that this time, I did manage to make them round 😋
A waft of smell left by the insidious curry leaves left me with an ever increasing penchant to try it yet again. And again. And again. The dosas were lined up with ‘malaga podi’ (gunpowder) and on the side was a savoury chutney made of tomatoes and garlic. Dinner was served last night with Kerala-styled fried chicken.
1. Fried Chicken: Marinate chicken breasts with coriander powder, red chilli powder, cayenne, amchur powder, salt and generous dosage of lime. After an hour, deep fry them and garnish with fried curry leaves and fresh green chillies.
2. Chutney: grind 2 tomatoes and 4-5 cloves of garlic. Then stir fry the paste with oil, black mustard seeds, salt and curry leaves.
Keftedes, the Greek meatballs, are usually fried in oil. However, I fry mine’s in airfryer which turns them healthier and still juicy 🇬🇷

Made Miso Salmon for the first time... It turned out alright only. I didn't know what kind of salmon to use so I tried Sockeye Salmon. The texture is really lean. Not as fatty as I would like. 😢 Anyone have any salmon recommendations?

비밀의 숲 재밌다고 왜 안알려주신거죠?🤣🤣🤣 한번 봤다가 재밌어서 3일 밤을 몰아 보느라 눈이 빨갛고요😳 심지어 스포 다 알고 봤는데도 재밌는건 뭐죠😂 일상과 바꾼 비숲 시간. 스튜디오 근처 카페 요호는 은근 조용한 서교동에 단비같은 곳이라 생각하는데요. 빵들이 다 괜찮아서 자주 가요. 지난주에 갔더니 트러플 버터도 있길래 바게뜨랑 사와서 잠봉뵈르 만들었어요. 트러플향이 나니까 또 다른 매력으로 맛있어요. 잠봉은 존쿡델리미트꺼 사용했는데 양도 맛도 한끼용으로 괜찮아서 종종 사먹을 거 같아요!

Bone Broth Recipe🍲👌🏼
1 whole organic chicken. Rotisserie works!
2 tablespoons of apple cider vinegar
2-3 bay leaves 🍃 *remove them later
2 celery stalks, chopped (veins removed)
2 large organic carrots, chopped
2 white onions, chopped
~8-9 cups of water
1/2 tsp of sea salt (or more, to taste!)
1/2 tsp of ground pepper
3 cloves of garlic, finely minced
In a large stock pot, add the entire chicken carcass; remove/shred all remaining white and dark meat. Throw in all of the ingredients- except for salt and pepper. Bring everything to a boil and then reduce heat to med/low and simmer (covered with a lid) for ~2.5 hours. It will thicken nicely. Use a strainer to filter ONLY the broth into a container & stir in the sea salt and pepper.
Orzo Greek Salad Recipe 🥗
3/4 cup of good quality olive oil
1/4 cup white wine vinegar
1 tablespoon fresh lemon juice
1 teaspoon of dried oregano
1/2 teaspoon garlic salt
1/2 teaspoon minced organic garlic
1 tablespoon of dried parsley
1/2 teaspoon ground pepper
2 teaspoons of raw honey or agave
The Greek salad has 4 cups of cold, but cooked orzo (I cooked mine in bone broth, recipe above!!🍲👌🏼🙃), 1 cup finely chopped bell peppers in every color, 1.5 cups of halved cherry tomatoes, 1.5 cups of diced cucumbers, and 2/3 cup of creamy feta chunks, I always buy goat feta! 🌱 if you wanted to switch it up- grilled halloumi would take this salad over the top!
