At camp, smiling but so soaking wet and freezing, not seeing any volcanoes, dormant or active as the clouds were sitting way too low. Heard all kinds of explosions from the active one but saw nothing, also had the tarp rip off the tent around 2am and had wind rain start spewing inside. Oh, and this is random, a dog startled us awake as it tried to attack and gain entry to our tent around 3am. Hiked along way up a mountain just for certain misery. 🥶The first snap of winter could hit Ireland soon 🥶 .
❄️Some charts showing cold air could move South from the Artic late next week.❄️ .
🔵This will make the temperatures drop to below zero in many spots overnight bringing frosty mornings and icy spells.🔵 .
Daytime temperatures would be in the low single figures. .
☃️❄️The big question... will there be snow???❄️☃️ There could be... especially on high ground but as this is still a long way away it we will need to wait and see. .

It was a cold, windy, very rainy day at Machu Picchu. Mostly we saw the inside of clouds but thankfully the misery did clear on a few occasions and we were able to catch the view. Plus our hotel includes a spa treatment with the room so we are only three hours away from full recovery!
What’s your favorite kind of soup? 🍲 I’ve been making and freezing tons of soup so we always have it in the cold months to transfer to a thermos for lunch or snacks, and dinner and for the fam when I’m traveling. Here’s my method for freezing and stacking individual portions:
1. Make soup and allow it to cool.
2. Soup soup into mason jars 3/4 full and cover. Prop tip: Make sure not to fill to the top so the soup can expand.
3. Stack and freeze soups up to 3-4 months.
