Today we wanted to celebrate Fuki after it featured on our Forage & Feast events menu earlier!! 🌿😋
Fuki hails from Asia where it grows in spots where little else will. With its rhubarb-like stem & huge lily pad leaves they are stunning plants, particularly reflected over a pond. It loves a bit of shade and doesn't mind moisture so is very much at home in an Irish garden!
The stems can be eaten like celery but MUST be processed before eating by boiling it first to remove the tough skin & bitterness. We use our harvests for making a delicious Fuki risotto - keep an eye out in our monthly newsletters for the recipe!

Today it’s one of our all-time botanical favourites - The Chilean Guava (Myrtus Ugni).
This evergreen shrub has a tasty tropical flavoured berry which crops into late September & October when many other berries have finished for the season. Its delicate pale pink flowers are highly scented & the seeds from the berries are said to make a coffee substitute (yet to be tried ourselves!!) but for you tea lovers the leaves make a great cup of black tea. All in all, one of the garden's most under-rated edibles! 😋
Finally, if you’re a topiary fan.. Let us introduce you to a box alternative....yep Chilean Guava clips very well and the new growth has a gorgeous red flush to it & the extra bonus, this plant has none of the blight & pesky caterpillar problems that plague standard box!

Medlar are stunning trees with big white blossom followed by fruit that frankly taste a LOT better than they look- that being erm, like a ‘dogs backside’ as the French call it! Once bletted (left to ferment slightly) the fruit is ready to eat as it is or made into amazing jam!
Immune to most pests and diseases we should all be growing medlars and admiring this fantastic fruit once more!!

Hailing from the Eastern edges of America comes a berry packed full of polyphenols (anxi-oxidants) with their almost black pigment. These berries are best cooked to make jams, sauces or added stewed to smoothies. Raw they’re very tart so much so their common name is the chokeberry!
Aronia make a stunning feature shrub in your garden growing to 3m max on average (depending on variety) with lovely white blossom in Spring followed by berries and then in Autumn the leaves put on a spectacular colour show. They’re also tolerant of wet soil, dry soil, wind and shade so basically they thrive where most fail. Word of warning though, the berries are also adored by birds so you need to be quick if you’re after a harvest!
I travel the world for most of the year to show you guys the most beautiful places when often times some of the best spots are right around the corner! The gorgeous @eccleshotel just opened their new outdoor spa area and invited Mum and me down for a lil midweek spa break!! We had the most incredible 75 minute facials followed by a relaxing seaweed bath (our skin is now smoother than a baby’s bottom 😂) followed by down time in this amazing outdoor jacuzzi with views of the bay. Every Tuesday we’ll be sharing some tips on design and photography. Today’s Tuesday Tip is a simple one but is something people tend to forget about. Personal style and preference is important but at the end of the day your clients/audience are the ones who will be viewing and using your design the most. Don’t forget the “who” you are designing for.
Today it’s the turn of the deliciously savoury Saltbush (Atriplex) .
As the name suggests the leaves have a pleasingly salty flavour even when grown inland away from coastal conditions where it’s often found sat on the upper shore between pebbles. Incredibly it doesn't mind some salty water which with the rise in sea level predicted & droughts could become even more of an important coastal crop!
This tough shrub just needs as much drainage as you can give it so pile plenty of grit into the planting hole. If like us to get rather addicted to these delicious leaves & need more plants then don't worry just take some soft wood cuttings from Spring into Summer and you will soon be building up your leafy supply!
Enjoy a handful of the leaves in a salad or add to your greens when making pesto...enjoy! 🌿😋
With electric pink flowers adored by bees (hence its other name Bee Balm), this is possibly one of the best blooms you can grow in your garden for colour, scent, happy pollinators and.. Earl Grey Tea!! Turns out it’s bergamot that gives this tea its unique flavour. Commercially, the oil from bergamot citrus (looks like a crumpled lime fruit) is used but as citrus doesn’t tend to fruit well here in Ireland the bergamot (Monarda spp) is a great swap as it tastes almost exactly the same. It’s very easy to grow from seed - just sow thinly on moist seed compost and don’t cover. Put in a warm light place and eventually you’re on your way to a cup of Irish grown Earl Grey! 😋 The young leaves also can be used in salad 🌿🌿🌿 Enjoy!!
The difference between my first knife and my latest one represents 4 years of knifemaking, a few hundred knives and almost as many mistakes, lots of researching, experimentation and practice.
I was proud as punch of my first knife, and I still am really. It was sharp, comfortable, made with very limited tooling, a success. Obviously it wasn't perfect (see picture 😂) but I was happy with it.
I'm equally as proud of my latest one.
