#47 - Northern #Thailand . We plan to cover four regions of Thailand, and this week we have northern Thai food, which is heavily influenced by #Burmese and #Yunnanese culinary traditions. Thanks to our guests Andrew and Renee (@kite_string_cantina) for always making us giggle.
Khao Soi Gai (เขาซอยไก) - this is perhaps the most beloved northern Thai dish, and begins by toasting Thai bird chilies, shallot, garlic, #lemongrass , lime zest, turmeric, ginger, cilantro stem, coriander seed and cardamom. This gets ground into a #curry paste and thrown into a pot with shrimp paste, coconut fat and oil. Add chicken stock, coconut milk and palm sugar, and we have our broth. It’s served with boiled and crispy Chinese egg noodles, bone in chicken, as well as pickled mustard greens, shallots, #limes and fish sauce on the side.
Khanom Jean Nam Ngeow (ขนอมจีนน้ำเงิน) - we start with simmering our pork ribs for about an hour to tenderize them. Meanwhile, we make a curry paste of dried chilies, #cilantro stems, garlic, shallot, shrimp paste and salt. In a pot, we sauté the paste, salted soya bean sauce and minced pork. Once cooked, we add the contents of the pot to our #pork ribs and broth, simmering for 10 minutes. Now the recipe calls for blood - we decided not to use blood. Instead, we used offals (organ meat) we had frozen from our rabbit a while back. Waste not want not! Those plus tomatoes and vermicelli noodles complete our dish, served with cilantro, lime and bean sprouts.
Nam Prik Ong (น้ำพริกองค์) this is a dip that begins with Thai bird chilies, garlic, shallot, shrimp paste and salt, ground into a paste. Then, in a skillet, you brown pork and tomatoes and add the paste in. Once cooked, you stir in scallion and cilantro and serve as a dip with pork rinds, chayote, radish, eggplant and lettuce. This was the surprise hit of the night!
Khao Neow Ma Muang (เขาเน่าม้าม่วง) - also known as sticky rice with mango, I messed this up so bad! Sorry friends. To start you need to soak sweet rice / glutinous rice for several hours. You steam, (don’t overcook it like me!) and incorporate coconut cream and sugar, letting it absorb. Serve with mango and chia seed.
As 2019 winds down and we transition into 2020, I reflect over the last 365 days.

What I was certain about was that since 2009, I was following my guidance and intuition about creating this technology and the music to be played through it. I knew this vision was bigger than me and the vision was clear, raise the vibration of the planet and harmonize humanity using sound, light, frequency and vibration. That vision is the driving force behind Bioharmonic Technologies and our amazing community. Four manufacturing rounds later, we are completing the build of our first 100 VIBES!
This year has not been without setbacks or challenges, It has also been one of the most transformational and rewarding years of my life. Harmonizing humanity begins with harmonizing ourselves. That has been my personal journey for many years and the VIBE is an amazing tool to help support that process.

ULTRASANITY ON MADNESS, SANITATION, ANTIPSYCHIATRY and RESISTANCE is a SAVVY Contemporary research, performance and exhibition project in multiple chapters, in collaboration with ifa Gallery Berlin, Association of Neuroesthetics (AoN_Platform for Art and Neuroscience), Picha Lubumbashi and Gnaoua Festival.
The project is funded by the TURN Fund of the German Federal Cultural Foundation (Kulturstiftung des Bundes) and the Foundation of Arts Initiative. The work by Lukas Hofmann was commissioned by the Jindrich Chalupecky Society, and supported by the Czech-German Fund for the Future, and the Czech Centre Berlin. Alessandra Eramo’s work was commissioned by Deutschlandfunk Kultur, Klangkunst Program, to be broadcast in 2020.
