Just had an epic #vegan Easter dinner featuring some of the best scalloped potatoes I’ve ever eaten (which I made by the way 😎).
The roast was @gustafoods Classico seitan roast, which has a really nice lightly spiced taste and great texture. So 10/10 and kudos to Gusta.
For the potatoes, I made a roux of vegan margarine and flour, but I let some onions simmer in the margarine first before blending. Then as it thickened, I just added a bit of veggie broth and plant milk until it was the creamy consistency I wanted. After that, just layered sliced potatoes with sauce and grated @daiyafoods cheddar, also mixing in some simulated bacon bits (many of these are accidentally vegan). Baked for 30 mins covered, and 30 mins uncovered to brown the cheese and top layer.
And of course Brussels sprouts because roasting them in garlic powder is the best thing ever. 🌱✌🏼
Long story short, there’s no reason to take an animal’s life for this or any other holiday meal. Fireside Coffee Co. created a new Holiday Roast for us for Easter! The beans for this roast come from Daterra Coffee Farm in the Cerrado region of Brazil. Daterra is the very first coffee farm in the world to receive Level A Certification in sustainability from the Rainforest Alliance!
This medium to dark roast has cupping notes of hazelnut, fruit and flowers. Just right for the beginning of Spring.
Tonight on #meatlessmonday we have this thing I picked up at @grocery_outlet for a night just like tonight. Because it’s in my freezer and I want things out of my freezer and also I’m sickly and don’t feel like cooking and also also it has TWO GRAVY PACKS. I’ll let you know how it goes.
My vegan holiday dinner at my family potluck christmas dinner 💕❤️ I brought my own roast and mashed potatoes with gravy but my fam actually did an amazing job this year with ensuring I had lots of options!! Other than the yams and brussel sprouts they also had (not pictured) zucchini spaghetti, stuffing, beans and also some other snacky things which was awesome 👏🏼😍😋
