I just happened to make this cake and cocktail which played off of each other so well!

Rice cookies/shirini berenji are common in Iran. The recipes available online and in cooking bookings are mostly from the area of kermanshah. After much research, trial and error I've accomplished a method utilised in Esfahan. The method, which is more complex, utilises whipped butter and cream. This results in an airier dough meaning a more crisp and creamy cookie is achieved.

The cake is made with chocolate sponge cake with original buttercream with some food colorings. I have a question for bakers, how do you make frosting with heavy cream with food coloring without having it split due to moisture? I have seen people stabilizing it with gelatins, cream cheese and even powdered sugar? Although it is easier to work with buttercream, I find it too heavy and it just does not make me feel good eating it knowing that it’s made with A LOT of butter. Please let me know, trying to make those aesthetic pleasing lettering cakes!
Potato buns, alternate serving. Inevitably, we introduced the kids to ba kua (pork...jerky? For want of a better translation) and ba hi (meat floss. This particular one was chicken). They now can't get enough of it, and we're going to have to learn how to make it because I've never seen it in the UK.

🔸️3 small (or 2 medium) bananas
🔸️70g pitted dates
🔸️60g 90% cocoa chocolate 🔸️1 tsp cinnamon
🔸️1 tsp baking soda
🔸️1/2 tsp salt
🔸️Preheat the oven to 170°C
🔸️Grease a muffin tin
🔸️Blend everything in a food processor
🔸️Fill the tin (I made 8)
🔸️Bake for 20 minutes

Hey you guys so I’ve been buying loads of bananas whenever I go grocery shopping and they invariably ripen too fast and I panic and freeze them. So I made these gluten-free “healthy” banana nut muffins instead of just throwing them in a smoothie.
Here be the deets for 12 muffins.
3 bananas (very ripe and mashed)
1/2 cup unsweetened apple sauce
1/4 cup honey
3tbsp coconut oil
1tsp vanilla extract
1/3 cup chopped walnuts
1tsp baking powder
1/2 tsp baking soda
A pinch of salt
1 1/4 cup gluten free baking flour (I used @bobsredmill 1 to 1 baking flour)
1. Preheat oven to 375F
2. In a mixing bowl lightly beat the egg.
3. Add in the mashed bananas, applesauce, honey, oil, vanilla, baking powder, baking soda and salt and combine by whisking.
4. Add in the flour and chopped walnuts to the wet mixture and gently stir to combine and make sure you don’t over mix.
5. Line the muffin pan with cupcake wrappers.
6. Fill each one almost to the top and use a measuring spoon to ensure it’s evenly distributed.
7. Bake at 375 for 20mins and check by inserting toothpick and if there is no residue, it’s ready to come out.
8. Let them cool for about 20mins. They can be stored in an airtight container in the fridge.
