Eggplant 🍆 night 😋🤪. Do you have ,,Cleaning meal “⁉️(eating leftovers)
Tonight I went pretty ,,clean” eating my leftovers 😂. I’ve cleaned my refrigerator and ate all my bread, meatballs,veggies...leftovers. Actually wasn’t that bad- it was badass delicious 😋 •
1. Bread Crumbs (bruschetta like)
2. Eggplant 🍆 filled with beans topped with meatballs and cheese 🧀.

Enough of bentos and food art for the week. Back to basic. It's meatless Monday and we had some toddler & kids friendly vegetarian fried rice which is both high in calcium and protein even without any meat.
1. Steam 1.5 cups of rice (3 kids). Set aside to cool.
2. Dice some carrots, shiitake mushroom and firm tofu. Lightly sautee the tofu cubes and mushroom.
3. Cut some brocolli florets.
4. Beat an egg, pan fry and cut into tiny pieces.
5. Sautee some minced garlic, onion and spring onion.
6. Add in diced carrots and the cool, cooked rice to 5. Stir fry for 2 mins then add the rest of the ingredients. Add small amount of salt/soya sauce / baby friendly seasoning powder and continue to stir fry til fragrant.
Homemade Stuffed Baked Orange Sweet Potato
First try yay. Finally tried baking sweet potatoes. 180 degree celsius for an hour. Initially thought I made a mistake as they formed a layer of crisp on top, which I have it like a hard fries ahah. But when I cut open, it was baked inside. Scooped out the sweet potatoes and mixed with:- Black beans. Kidney beans. Paprika. Cumin. Coriander. Green onion. Lime. .
That first bite into it and I fell in love. 🤤

How I made 💁🏻♀️
Chatpate Kale Chane Recipe:
⚫️Soak Black Chana Overnight & after soaking proper rinse then add soaked black Chana in pressure cooker , add sufficient water & salt .
Give it 4-5 whistle or until done.
⚫️ In a pan Add oil( I prefer Mustard oil), add cumin seeds & Asafetida , let it sputter.
⚫️Add chopped Onion & green chillies and sauté until it becomes slightly golden in color then add finely Chopped ginger and garlic.
Sauté for a minute.
⚫️Now, add turmeric powder & sauté for while then add chopped tomatoes.
Add little salt according to the gravy ( keep in mind , we already added salt while boiling black Chana ).
⚫️Cook tomatoes for 4-5 minutes then add Red chilly powder ,Chana masala & little bit of Amchur Powder.
⚫️Again cook for sometime , then add boiled Black Chana & sauté for 2 minutes over medium heat then cover the lid for 2 minutes then add splash of boiled kala Chana water.
Sauté for another couple off minutes over low heat.
⚫️Turn off heat , add lemon juice & chopped coriander leaves .
Tadaaaa it's ready ...😀😜
