Last nights dish.. Pumpkin and Chicken Risotto! 👩🍳
Guy was so shocked how good this tasted and so was I to be honest. Usually the first time making something you always think of ways that you could of improved the dish but this was amazing first try! 🍽
I bought the already chopped up pumpkin for this dish.
Chicken Breast (I only used one for this batch)
2 Cups Arborio Rice
Massie Chicken Stock
1 x Onion
1 teaspoon of Minced Garlic
1/2 Cup of Parmasen Cheese
1 Firstly put your chicken breast, seasoned to how you like it (Salt pepper etc) in a glass dish, cover with foil and Bake In the oven at 180 degrees for approx 45 mins.
2 Lay a tray with baking paper and place your pumpkin on the tray. Bake for approx 20 mins.
3 Once the chicken and pumpkin is ready set aside.
4. Dice up onion and place in a large pan with garlic, brown off on a high heat.
5 Put rice in and allow to heat up.
6 Turn heat down to medium heat. Start to slowly add stock, only add more once the rice has soaked the other liquid first. Continue to mix and slowly add stock for approx 30mins until all stock is in and rice is cooked.
7 Shred Chicken and add chicken and pumpkin into the dish and stir.
8. Take off heat and add Parmesan and stir through.
