Vichysseoise with green asparagus.
. • 1 l of chicken broth
• 1 white onion
• 2 leeks
• 1 potato
• 200ml of cream
• chopped parsley
In a saucepan, collect the onion, the potato and the white part of the leeks cut into small pieces, cover with the broth, season with salt and pepper, cook for about thirty minutes. Remove from heat and blend until a smooth cream is obtained. Add the cream and blend again. Let it cool, then put it in the fridge. Meanwhile blanch the asparagus tips for 1-2 minutes in boiling water, then immediately put them in ice water, so they will remain green and crunchy. Serve by pouring the cold vichysseoise in soup plates garnished with 3 asparagus tips.

The first time I laid eyes on the magical waterways of Venice I was 21 years old on a study abroad program backpacking through Europe. -
My friend Joyce and I got separated from our group on the train. We finally found seats and were crabby from being left on our own. Upon arrival and after lugging our hella hefty packs off the train at the Venezia Santa Lucia station, we trudge towards the exit signs for the “Grand Canal”, defeated and worn out. Suddenly, the tour leader’s assistant appeared and she was simply buzzing. -
She led us toward the entrance and instructed us to close our eyes. Instinctively, Joyce and I clasped hands, shut our eyes, and stepped forward. Opening my eyes was one of the most magical moments of my life. How had I gotten here, in this place I only dreamed of seeing, sharing such an incredible moment with this amazing person...
