That day the water was very calm. With the sun coming up, the light was just perfect. O’neil is a big guy. I remember how I was impressed by is hands when I was a kid. More then 6 feet 200 pounces, the work is still hard for him. The cages he designed himself with his experience are very heavy. All day he pulled out of the water those wooden cages. Very impressive...

💖Tomato Chilli Lobster Omelette💖
Had leftover meat in my remaining lobster head. Steamed and extracted the meat to add to my omelette mix - eggs beaten with red chilli, chilli padi and chopped tomatoes.
We attended the soft launch of the newly opened Tattu Restaurant in Edinburgh. It was beautifully decorated with floral interior on the ceiling and dim lighting.
We were warmly greeted by the waiting staff and we made them aware of our halal meat dietary requirement. Unfortunately only the chicken was halal but if you go in with these expectations you won't be disappointed as there's plenty of fish and veggie options.
We had prawn and lobster toast covered in sesame seeds dim sum; chilli shrimp with a nice sauce; soft shell crab; chicken truffle shumai dim sum and the wok fired angry bird (a chicken dish).
For dessert we tried their cinnamon sticky toffee pudding with pear and ice cream.
To drink we had the red lotus mocktail which was disappointingly 50% ice so heavily watered down with a syrupy sweet taste.
We enjoyed the overall experience, food was good but nothing blew us away.

Percé, Gaspésie- Lobster Fisher Man, O’neil Cloutier. I shot this in June few years ago. Percé is still very cold at the end off spring. With the humidity and the wind, the conditions are hard on the boat. It’s not an easy job... The day starts before the sunrise and doesn’t finish when the boat is back to the port. It was a conflicting situation for me as a vegan; very impressed by the lifestyle and in the same time very sad for those creatures...
