I used 3 Lobster mushrooms
1 shallot minced
1 gold Yukon potato sliced thin
1/3 cup shredded carrots
3 cloves garlic minced
1/4 white wine
4 cups vegetable stock
2 Bay leaves
5 springs thyme
3 Tbl tomato paste
1 tsp paprika
1/2 tsp celery salt
1 cup cream
Salt and pepper to taste
Slice the mushrooms thinly and add to the simmering butter. Cook until the water is gone and they are starting to brown. Add the vegetables and cook until they start to brown or until the bottom gets brown bits. Add the tomato paste and stir. Once combined deglaze with the wine be sure to scrape all that yummy brown off the bottom. Then add chicken stock and bay Leaves and thyme. Bring to a simmer and simmer between 30 minutes and an hour until your mushrooms are nice and tender. Once tender add to a blender or food processor to blend. After blending return to pan and add the cream to warm up but not boil. I set aside a half a cup of the cream and whisked it until it was thick to add as a dollop on top. I also set aside a couple of slivers of the mushrooms before I added the stock in order to top the soup with.
If anyone else makes this recipe that I cobbled together from several other recipes please let me know what your thoughts are on the end result! I like mine really thick which is why I did less of the liquid but you could certainly add another cup or two of stock and another cup or two of cream to make it a lot better. I also don't mind having a little tiny chunks in it so I didn't strain the bisque. Other recipes did suggest straining if you want it incredibly smooth.

behold the beauty which is @spagochatswood's lobster scrambled (3!) eggs with bisque & croissant! so luxuriously silky & shellfish-y & essentially the eggs version of the pasta I had with @phuocndelicious many moons ago (3rd pic). "cheek on toast" was mellow & comforting with its beef cheek, kale & poached eggs combo, which again was similar to their ragu pasta (4th pic). haha I'm such a sucker for preferred flavour combos 😅 panzanella would be great today in sydney's spring heat. hope everyone's enjoying the sunshine! ☀️
