Fully expected a gain after the maintain last week and then this week has been full of comfort eating 💔
Back on it today. I have my meal plan done, Aquafit booked in and the only off plan event I have is the funeral on Monday. Hoping to lose at least 3 pounds by next weigh 🤞🏻
What a plate of goodness greens 🥬🥦should look like in a Sri Lankan/Indian household. Some parappu, tofu curry from the mummy (you can't see it because I flooded my plate with parappu 🍛), stir fry vegetables, and two sambals on the side - mint and coconut.
Trying a new parappu recipe today - the husband says it works! I also say it works so bon appetit errbady. .

MONDAY MEAL PREP ✨ To be honest, I’m not a huge fan of meal prepping entire meals, but I love preparing components. I usually prepare:
🌿 A source of protein: here I have BBQ tempeh, but I also love roasted chickpeas + baked garlic tofu.
🌿 Whole Grains: I love cooking a big pot of brown rice, quinoa or buckwheat to add to bowls, soups, stir fries or salads.
🌿 Roasted veggies: usually in the form of sweet potato, brussel sprouts, carrots or peppers.
🌿 Sauce: I make one of the three sauces from my free easy vegan sauces ebook (link in bio) to use for bowls, to top salads or for roasted veggies!

Having lunch prepped ahead of time is absolutely the best feeling🥗 If you’re planning to make your lunch next week, here’s some inspo for prep this weekend☺️❤️
1.Find someone that looks at you the way I look at salmon in my lunch box😍 Chopped romaine🥬 topped with cucumbers, tomatoes and seared salmon with berries🍒& chocolate covered almonds on the side.
2.Seasoned chicken🍗, brown rice, sautéed kale with mixed berries and sea salt and almond dark chocolate🍫
3.Macadamia nuts and 85% dark chocolate, two🥚🥚hard boiled eggs, arugula salad with prosciutto, cucumber ribbons, tomatoes and mozzarella🧀
4.Salad with honey🍯mustard glazed chicken, sliced cucumbers and sliced avocado, clementines🍊 and a peppermint cookie bark😋
5.unwich with romaine, turkey, salami, feta and tomato, eggs, cucumber, goat cheese & protein bar.
