Mac & Cheese. I make two of these (of course 🙄). No, listen, there’s a method to madness. This one here features bacon bits. My veggie alternative replaces the bacon with mushrooms and is finished off with truffle oil. Serve with a green veg for children and salad if you’re a grown up. Or if you really want to go to town, the mushroom version is a lovely side to a fat juicy steak!! INGREDIENTS for 4:- 350g macaroni or small pasta shells
3 tbsp butter
1 tsp English Mustard
1 garlic clove crushed
200g bacon diced/bacon lardons or 100g chopped chestnut mushrooms
3 tbsp plain flour
2 tbsp grated parmesan (or Pecorino if veggie)
2 tbsp Panko crumbs (Japanese bread crumbs)
(1 tbsp truffle oil for the mushroom mac cheese)
Cook the pasta for 7 minutes or 2 minutes less than the cooking instructions.
If making the "bacon bits” version add them to a frying pan with a 1 tsp oil and cook until crisp. If making the vegetarian version, use finely chopped mushrooms instead.
Melt the butter in a saucepan and add the the garlic and mustard. Add the flour and stir to form a roux.
Whisk in the milk - don’t panic if it seems lumpy, the sauce will become smooth. Just keep whisking!
Take the sauce off the heat, season and stir in the cheddar.
Add either the mushrooms or bacon and the cooked pasta.
Pour into an ovenproof dish and sprinkle over the Panko and parmesan. Bake for 20 minutes at 200, 180 fan.
1/4 kg elbow macaroni
1/2 cup thinly sliced hotdog/ham/bacon bits
1/4 cup evaporated milk
1/4 cup water
1 cup grated cheese
1 tsp salt and pepper
1 tsp Seasoning
3 tbsp unsalted butter
Chiz wiz (optional)
1. Boil pasta until cooked. Drain and set aside.
2. Heat butter in a pan and cook the hotdog/bacon/ham bits.
3. Add evaporated milk, water and cheese.
4. Season with salt, pepper and seasoning then simmer until thick or when the cheese melts.
5. Combine pasta with the cheese sauce.
6. Transfer on a serving plate and serve.
7. (optional) Drizzle with Chiz Wiz for more cheesy goodness. 😊

Bless my mess, after a few concoctions I finally came up with the yummiest vegan pesto dish.
That’s right gang, no dairy...
But that’s impastable 🤷🏼♀️
1 cup cashews (soaked)
1 cup of water
2 tbsps nutritional yeast
1 fresh bunch of basil leaves
1-2tbsps olive oil
1 tsp sea salt
2 cloves of garlic
Juice of 1 lemon
Pinch of black pepper
1/2 cup pine nuts
1/2 cup green stuffed olives
1 zucchini roughly chopped
1/2 bag whole meal pasta spirals or pulse pasta if gluten gets you down
1 big handful of greens (spinach, kale, arugula)
Blend together cashews and water, lemon juice, basil, salt, pepper, garlic, olive oil and nutritional yeast in a food processor or blender.
Note* avoid using a Nutri Bullet as there will be a Texas Chainsaw Massacre effect erupting in your kitchen 😅.
In a pan, on low heat, add zucchini and pine nuts, mixing thoroughly until slightly golden.
Boil the pasta then mix through pesto sauce and zucchini mix.
Finish off by serving with some spinach leaves or greens of your choice and of course some green olives!
Mac n cheez with tofu schnitzel’s (see story for how to make tofu!)
✨MAC N CHEEZ✨
1 medium potato or 1/4 cauliflower (I used potato here)
1/2 cup cashews
2 cups of water
1/4 onion (quartered)
2 cloves of garlic
1 tsp Apple cider vinegar
1/4 cup of nutritional yeast
Lemon juice of a whole lemon
1tsp vegan butter
🌱add all ingredients to a small pot (apart from doing onions and vegan butter) let it boil for around 20 minutes
Once fully cooked, add ingredients to a blender and blend til smooth. You may need to add extra water if it’s too thick. Set aside
🌱 heat butter in a large pot.
🌱add spring onion and a pinch of salt. Let it fry for approx 5 minutes.
🌱add cheez sauce from blender, along with cooked pasta and some frozen peas
🌱serve immediately with tofu schnitzels and some greens 💖👏🏼

Thanksgiving Dinner - A hybrid Jamaican & Canadian meal. I begged my mom for a week to make Jamaican Mackerel Rundown and she came through 😁. My other favourites tonight were my mom's mac & cheese and her mushroom loaded roast beef. Tonight was a good night for my tumtums 😊🍽️🦃.
For dinner tonight, I was in the mood for mac and cheese. It all started with onions and garlic in a pan with filtered water. Next I added mushrooms, kale, salt, and pepper. I brought a pot of water to a boil and seasoned it with salt. Then I added gluten free shells. For the "cheese" sauce, I blended soaked cashews, orange bell pepper, and nutritional yeast. I poured the sauce in thw pan along with chickpeas and the cooked shells. It creamy, savory, flavorful comfort at it's best. For dessert, I made a strawberry banana smoothie bowl using frozen strawberries, a banana, and almond milk. I topped it with chia seeds, sliced banana, and chopped figs. This was a perfect Monday meal.
