The signature endive dish at @estelanyc which got its first @michelinguide star ⭐️ right after our visit. Currently no. 80 on @theworlds50best. Deceivingly simple dishes that are packed with flavor and balanced in both taste and texture. I’m not a huge fan of endives, but the combination with walnuts, anchovies, and Ubriaco Rosso (cow’s milk cheese) made it hard to put down the knife and fork. #50besttastehunter

Our first main course is inspired by Chef Nico’s most recent vacation to Sardinia. A variation of risotto, chef replaces the rice element with a roasted Fregola Sarda, a rice-sized Sardinian pasta cooked with whipped fresh cream, butternut squash and capers. On top sits a creamy Maine sea urchin. #chefsapartment
Our second appetizer this month at the #chefsapartment is a coco bean velouté on a carrot, celery and onion brunoise served next to a pork trotter cromesqui. Coco beans from the French town of Tarbes are famous for their velvety richness and delicate flavor.
