We are closed today (being Tuesday) and we found this note under our door! It suggested a book exchange!!! What a great idea!!! 𝐒𝐨𝐮𝐫𝐝𝐨𝐮𝐠𝐡 𝐑𝐨𝐭𝐢 𝐁𝐫𝐞𝐚𝐝 𝐑𝐞𝐜𝐢𝐩𝐞
Most of our meals consist of legumes, grains veggies, good fats and a healthy dose of bread 😆 And most of this bread is being naturally fermented with all the wild yeasts we like.
Since we can’t travel these days, Stephy and I made the resolution to travel within and explore some of our favorite dishes in the world.
This is a take on Bali Warung dish: red rice and curry.
I didn’t make a good sambal 😔(big regret) and the roti bread is not part of the staple meals in Bali but ... we love all of this! So here we go..
🌴 Roti bread Recipe 🌴
Refer to my basic Sourdough bread recipe on YouTube, link in Bio 👆🏽👆🏽
Note: this recipe will yield roughly x6 150gr roti breads so feel free to divide or multiply recipe 😉
💥 Extra Virgin olive oil or melted ghee.
Follow the recipe until bulk fermentation process finishes.
Instead of pre-shaping the dough we will cut dough into 150gr pieces and shape like pizza balls creating surface tension. Rest for 1hr. at room temperature. On a well floured bench place a dough ball and roll to 2mm thick round flat circle. Brush the surface with lots of olive oil or ghee and roll dough from one end to the other forming a thread like shape. Next roll the thread into a spiral shape making sure to seal the end well. Make it tight.
Rest for a further 2hr at room temperature.
Once rested, pre-heat a non stick flat pan or enamel flat dish (28cm diameter is ace)
Flour your working bench. Roll the dough flat to 2mm. thickness and cook on high heat until both sides are lightly charred.
Make sure your pan is hot as the Caribbean, so your roti bread doesn’t stick to it, no need to grease your pan.

Need ideas 💡 DAY 2 EES breakdown Underwater noise pollution 🗣 AGL acknowledges there have been zero studies to measure the soundscape of Westernport. What’s more there are no sound impact studies in Westernport or ever with a berthed FSRU, LNG or petroleum carrier. So AGL have modelled their study on what they call a similar operation to which they give no details of the comparable soundscape. Their report states that the amount of sound coming out of the operation is expected to elicit behavioural changes in dolphins, whales and seals. It is reported that even whales entering Westernport Bay will be able to hear the sound. Whales and dolphins that enter “the wider area” (vague) around the jetty will experience acoustic masking ~ meaning it’s too loud to communicate 🙉 this is still considered to be a “minor and negligible” impact on the population level. This is true for the species as a whole, but AGL have not factored in the community level, and that there is at least one pod of resident Burrunan dolphins who will be hugely impacted by this noise @marinemammalfoundation@dolphinresearch . Some Westernport locals report having seen this pod here for 30 years! The operations noise is said to likely deter fish from the area, altering the foraging and ecosystem dynamics of crib point and its surrounds. The fish better get out of there too because the report says if they stay 12-48hours they will subject themselves to irrecoverable injury from the sound pollution. Furthermore AGL have assumed (and we all know that makes an ASS out of U and ME) that the existing harbour operations already create a noise field that alters the marine receptors. I have some lovely new colours in 8ply that that I’d like to make a new skinny stripe blanket with, I’ll put some colour combos together and see what happens. Playing with colour is one of my favourite ways to procrastinate!😬😬
