Saw these beauties in my bike ride this morning! Wish they had a tree to hang out in instead of power lines. #natureheals

Taking a break....⠀⠀⠀⠀⠀⠀⠀⠀⠀
Hey folks, just a quick note to say I'm checking out of social media for a little while. It's our quiet time over the winter and my body is yearning for a little bit of quiet in this season. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
So I'm going to be deleting the app, putting down the phone and trying to get outside, as much as possible, in all weathers - anyone have a dog I could borrow?! 🐶🐶⠀⠀⠀⠀⠀⠀⠀⠀⠀
If you want to get in touch, drop me an email at email@example.com ⠀⠀⠀⠀⠀⠀⠀⠀⠀
See you on the other side. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

One of our female #Veteran riders, the bike she borrowed for the event, and the woman who donated parts that helped us build that bike. This was a cool moment!
The donor just happened to be at the GHORBA 20th Anniversary Party at the @iamspecialized bike tent where we were speaking with the local reps. I recognized her and wanted to show her where her donated parts went. Cassie (on the right) got to meet Lisa (left), and we had to get a photo.
Over the past few years I was always teased about eating roots, leaves and tree bark. As I matured, I took the laughs, jokes, etc with pride. Today I want to share with you about the burdock root. This root is a vegetable that’s native to northern Asia and Europe, though it now grows in the United States, too. The deep roots of the burdock plant are very long and either brown or nearly black on the outside.

🌱Thyme🌱 - such an undervalued herb!
Did you know that thyme can be used to relieve respiratory problems including coughs, sore throats and asthma. It also helps with infections as it is antiviral, antibacterial and antifungal. Wonderful herb for this time of the year when everyone seems to get sick. Thyme can also ease digestive issues such as bloating and indigestion. After I bought my first thyme tea I kinda got hooked.
But nobody can give guidance, can give light, to another. Only you yourself can do that; but you have to stand completely alone. That is what is frightening for the old and the young. If you belong to anything, follow anybody, you are already entering into corruption. Understand that very deeply, with tears in your eyes: when there is no guru, no teacher and no disciple, there is only you as a human being living in this world - the world, the society, which you have created. And if you do not do something for yourself, society is not going to help you. On the contrary, society wants you to be what you are. Do not belong to anything, not to any institution or organization; do not follow anybody, be not a disciple of anybody. You are a human being living in this terrible world; a human being who is the world and the world is you. You have to live there, understand it, and go beyond yourself.
This week to #sparkthechange we were asked to share how movement can help keep us off the blood sugar roller coaster. Our bodies utilize energy in a particular order. Energy for movement will always come from glucose in your blood, first. Second is glycogen from your liver and muscles. Finally, after blood glucose and glycogen are depleted, the body will turn to fat for energy. Now that you know what movement can do, make an action step to fit a little bit more into your life each day! The perk: a walk with my husband and best friend, a beautiful view, and a sense of peace. #naturespeaks#natureheals
One baby was home all last week and now we are starting this week with the other one home...but she hates to miss school! So I’m going to try to get her out into the fresh air today - it’s going to be sunny and 48! A heat wave! 😂 #natureheals#quietlife#slowliving#thepinecottage

As you may have notice, I usually don’t use milk or cream in salted recipes as they tend to difficult digestion and cover the flavor of some ingredients.
Today I wanted to share with you a delicious Vegan Curry 🍛 made with Coriander. As Coriander has a strong flavor, coconut milk compensates it!
Coriander is a medicinal plant used since ancient times by the Egyptians, the Greeks and the Romans.
It’s one of the most important natural antibiotics (to heal inflammation), and it’s very rich in Iron, which is the reason why it’s an ingredient that must be present in our kitchen, especially when used raw as a topping, in salads, soups…
🥄 Ingredients (2 pax):
4 handfuls of Organic Basmati rice
90gr of Fresh Coriander
2/3 can of Coconut Milk (I used Origens)
½ tsp of Fresh Ginger, grated
7 Cardamom seeds
1 Glove of Garlic
1 tbsp & ½ Curry powder
1 tsp of Tandoori Masala powder
Pinch of Salt q.b.
Pinch of Ground Black Pepper q.b.
Virgin Extra Coconut Oil
Add coriander leaves and stems into a blender together with coconut milk. Blend until obtaining a homogeneous liquid. Add it into a saucepan over low heat and add some chopped vegetables (I used zucchinis, carrots and mushrooms) and all the spices, salt, ground black pepper, garlic and coconut oil. Let them cook for 15-20 minutes, until the sauce gets thicker.
Separately cook basmati rice into salted water. Once ready, drain it. Serve it on a dish and add the coriander sauce on top together with some fresh coriander leaves.
I promise you that you’ll love it! 😍😋
Try to make it and tag me #anitadambrosiorecipes 😉

I looked around me and saw people with cameras and cell phones capturing the beauty of the yellow fall around them. I felt a pang of sadness from the earth. “Nobody will just spend time with me anymore,” the trees whispered. “I don’t only want to be photographed. I want to be touched. Seen. Danced in. I want people to fall in love under my branches. I want to be moved by infectious laughter. I want children to gather my leaves. People come up here just to take pictures of me and leave- I’m lonely. I don’t want to only be seen through a lens. I want to be looked up at with big, glassy eyeballs full of hope and wonder.”
I pressed my hand against an aspen tree. “I’m sorry for all of the times I have photographed you without listening to your whisper beforehand,” I said. I’m sorry, Earth. I know. We’ve forgotten to Be. Thank you for reminding me.
Sometimes it feels as if we’re living in an echo chamber of noise and constant over stimulation of our senses.
No wonder our nervous systems often feel burned out.
The world has become louder, while quietness is being eroded.
Excessive noise is 2nd only to air pollution as a cause of environmental ill- health.
On the introversion/extroversion scale I have found my balance between social stimuli and the knowing when to withdraw when I’ve had enough.
If I’m in a social situation with too many people I always need to have an exit plan.
I love people and socializing in small groups, but truth be told I prefer my own company and that of like minded souls or my dog .
I love adventure and travel but at my own pace.
I find the holiday season exhausting and stay as far away from malls as I can.
I hate crowds, fluorescent lighting, loud music and loud people.
Some people derive energy from quietness and their own company- while others find energy from social interactions with others.
I hate labels, but would say I’m an introvert who on occasion loves masquerading as a wild extrovert. I love to dance and get dressed up.
Until about 10 pm or so. And them it’s sleep- 8 or 9 hours of quiet, healing, undisturbed rest.
I’m not shy or emotionally sensitive, but I am highly sensitive to this high energy, high tech world we live in.
I thrive in nature, quietness and my own company- and everyday I immerse myself in the calmness of meditation.
So much power comes from learning to sit still in a quiet room alone. Ah bliss.
Try unplugging from the world of cell phones, social media and the 24 hour news cycle.
Practice less scrolling and strive for more connection.
Forget about Likes and Followers and be the master of social media not its slave.

Joshua Tree is a little different when you can’t go on the trails bc dogs aren’t allowed but we made due and found some unpaved roads to explore. Honestly it was a nice change of pace. We were the only ones on the road minus about 4 cars that drove by on our 3 hour loop. We can’t wait to get back and camp in the spring. .
