Quick and easy fragrant coconut soup. My favorite soup from @greenelephantnh and @greenelephantme. Recipe from @olivesfordinner. .
-1 TB toasted sesame oil
-2 shallots, thinly sliced
-6-8 shiitake caps, thinly sliced
-2 tsp brown sugar
-2 scallions, thinly sliced
-4 cups broth
-small can of coconut milk (5.46 ounces)
-juice from half of a lime
-10 cherry tomatoes, sliced into halves
-tofu cubes (cut into dice-sized pieces)
-thai chilis or sriracha, to taste
-Heat the sesame oil over medium low heat, then throw in the shallots. Allow them to soften for a minute or two, then gently stab the slices with chopsticks or a spatula to break them up. Throw in the shiitake caps, stir, and allow to soften for two minutes. Sprinkle the brown sugar over the top, then stir again to combine.
-Increase the heat to medium, then throw in the chopped scallions and broth. Stir, then allow to come to a small simmer. Allow it to simmer for about two minutes, then remove it from the heat and stir in the coconut milk, lime juice and tomatoes.
-Serve immediately with a few tofu cubes thrown in if you like. Garnish with hot peppers or sriracha and cilantro, if desired.

Walked 13.8 miles today to Mount Laguna camp site, left late because it was pouring with rain and I am yet to master packing up a tent in the rain. Very hot and uphill after that, and had to step out the way every 2 minutes because there was an ultra marathon going on.
Cauliflower puree, made silky smooth in my vitamix and blended with @violife feta (which is 💣). Roasted tiny shiitakes and bellas, with crispy mandolined red onion, and an excessive amount of garlic + butter 😂😂. #veganaf#olivesfordinner
I didn't think roasted cauliflower was something that could be improved upon, but @olivesfordinner has proven me wrong☝️This firecracker whole-roasted cauliflower takes roasted cauliflower up several notches to irresistible-can't-get-enough-when-can-we-have-this-again!! status 👏

Vegan clam chowder - recipe by #olivesfordinner modifications: za’tar, 2 sheets of nori vs 1/2, 1 package of vegan bacon vs 4 slices, 2 almond milk #kitehill plain yogurt, topped with toasted almonds and seasoned panko.
One of my guy’s most favorite meals is grilled cheese and tomato soup. Soooo, I made him veganized versions and guess what? He loved them! 🙌🏼
For the grilled cheese I used a recipe from @olivesfordinner and it turned out amazing! Made from coconut milk, along with coconut vinegar, agar agar, tapioca starch and a couple other things, it produced a wonderfully melty cheese, that believe it or not, didn’t taste like coconut milk! 👍
The tomato bisque was courtesy of @thevegan8 and it was equally amazing (as all her recipes are). •
Just to put this all in perspective, my guy is not vegan. He eats vegan at home hut when we eat out he eats everything he doesn’t get at home. So when he devours the vegan meals I make, it really says a lot about just how delicious the are. 😋🤤😍
Bugs Bunny Lox
(Aka 🥕🥕🥕) Gotcha! It's not my usual go-to smoked salmon and cream cheese buddy, but a vegetarian knock-off!
Anyone who knows me knows my love for eating and making smoked salmon. So, I HAD to try making this super simple carrot version by @olivesfordinner!
Verdict? A very tasty, meaty, and slightly earthy alternative! (Tongue in cheek, I know, but the carrots didn't have the delicate, light texture of smoked salmon. More creamy and smooth. I also hand sliced them so they weren't paper thin). I'll totally make this again... 🥕 or 🐟 ?

I am so excited to share this dish. I LOVED clam chowder and I crave it often. Since I stopped eating fish in December I tried once to make a chowder without clams. It turned out so-so.
Then I decided to try a different recipe and just follow it as closely as possible. I did add Tabasco in my bowl after I took the pic heeheehee
I plan on sharing the story of how and why I stopped eating fish later because I know that anyone that knows me or follows me on FB is in shock that I quit fish. Weird huh?
So, for now, I didn’t want to wait to share at least this pic of that chowder but also thanks it’s creator for it. I am sure there are things I will do every now and then to tweak the recipe but I followed it pretty closely and it was DELISH!!! That’s right, DELISH! If I could make my font bigger I would!!
It did taste VERY close to the real deal. No joke. In fact, the husband said it tasted more flavorful than a regular chowder. Wahoo!
And Soy Curls!?!?! WTH! Crazy interesting and fun!

Had to try out the notorious carrot lox bagel recipe by Olives for Dinner🚫🐠 It wasn't the simplest recipe & it was relatively time consuming (the carrots have to marinate for 3 or more days) but the results were definitely delicious👅 I added the carrot lox to an everything bagel with Rawesome onion & chive cream cheese (by far my favourite vegan cream cheese I have tried), cucumbers, red & green onions, fresh dill from my garden and cracked black pepper! The carrots weren't the best on their own, but with all the fixings I finished my plate😛
Will someone please send me a carrot lox + kite hill cream cheese toasted everything bagel?! 🤤 Thinking it might be time to make another batch of @olivesfordinner’s amazing carrot lox 🙌🏻 Easily the best, fish-free vegan alternative that blows EVERYONE’S mind!
