2 cups red lentil flour
2 cups buckwheat flour
1/2 cup date syrup (or any sweetener of choice)
1/2 cup plant milk
1/3 cup cocoa powder
2 big mashed bananas (or 3 small)
2 tsp baking powder
1 tsp lemon juice ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀ ⠀
Mix all the ingredients together. Divide the batter into two baking pans and bake at 360F for about 30 minutes. Spread some of the chocolate cream onto one of the chilled sponges, then place the other sponge on top. Whip your coconut milk. Melt the chocolate and mix it with plant milk so it’s more runny. Then add the rest of the ingredients to your whipped coconut milk and mix it carefully. Let it sit in the fridge for a few hours.

This scramble has tofu, peppers, onions, mushrooms, tomato, and seasoning (including turmeric, which is what gives it that golden color). It’s simple, delicious, WFPB, and definitely a WIN no matter what time of day you eat it!✨🌿✨

200 g Cashewnüsse (eingeweicht über Nacht)
1EL Zitronensaft 🍋
250 ml Sojasahne @alpro
3 EL Hefeflocken
200 g veganer Käse @simplyvgenuss
1 TL Salz
200 g Paniermehlmix (100g Semmel & 100g Panko)
🏵️Zunächst Cashewnüsse, Zitronensaft, Knoblauch, Soja-Sahne Streukäse, Flohsamenschalen und ein Teelöffel Salz in einen Mixer geben und gut durchmischen.
🏵️Eventuell ein bisschen Wasser dazu geben.
🏵️Mit angefeuchteten Händen die Masse in flache Scheiben formen und danach in Paniermehl wälzen.
🏵️Für 1 Stunde ins Gefrierfach legen.
🏵️ Mehl und Wasser mit einer Prise Salz mischen und die Scheiben darin eintauchen
🏵️Danach nochmals ins Paniermehl und direkt frittieren in einer Pfanne.

I usually eyeball everything, but I mix flour, baking powder, a lil bit of salt and cinnamon in a bowl, then add my finely chopped up apple, vanilla extract, cut up raisins and plant based milk until it has a nice, thick consistency. Then I cook them on medium heat and top them with soy yog, pb, more cinnamon and more apple slices. They are soooo good, really fluffy and moist (sorry) on the inside 💛

Packing the fibre in this morning with choc chia pudding pots.
4 tbsp chia seeds into a bowl, poured over coconut milk, 1 tsp vanilla extract & 1&1/2 tbsp cacao powder & stir really well. To be honest I didn’t measure the liquid, just popped back to it an hour later and stirred some more in before covering and heading to bed.
This morning we split it between 2 jars and added sliced banana, coconut yoghurt, melted choc, crunchy peanut butter and granola. Monday yum day 😋 #healthytwists#chiaseeds#chiapudding
I will always be a fan of chili because its easy and delicious. I was 0 days old when I realized that tomato paste makes all tomato based dishes 🍅 A-MAZ-ING!
This is my recipe for quinoa chili bowl! It's a hint of 🌶️spicy, roasted tomato flavour that makes this chili a winner!
🎆RECIPE🎆 Serving size: 4-6
✅500g Red lentils
✅2x 400g kidney beans
✅6 cups water (boiling)
✅1x400g can diced tomato
✅1x 500g tomato paste
✅2x medium onion (diced)
✅1x small whole garlic (diced)
✅1 1/2 tsp cayenne pepper
✅Salt & Pepper (to taste)
✅2 Avocado (whipped)
In a pot on medium heat add your Avo oil, onion and garlic and sautee till soft. Add in you lentils and mix well. Add in your boiling water and 2-3min cook until lentils are cooked. Add in diced tomato and tomato paste, and herbs and spices. Cook until it turns a deep red then add your kidney beans for 5 min or until soft. Take off the heat, serve on a bed of quinoa and topped with guac and eat!

Anyway today is National Ice Cream Sandwich Day 🍦so I’m all here for it!
Froyo Cookie Sandwiches 🍪
Frozen yogurt: 🍦
-350g coconut yogurt (vanilla) @coconutcollabde
-1/4 cup coconut milk
-1 tbsp vanilla extract
(For extra sweetness add 2 tbsp maple syrup)
Chocolate Chip Cookies: 🍪
-2 1/2 cups almond flour
-pinch of salt
-hint of cinnamon powder (optional)
-2 tsp baking powder
-1/4 cup coconut oil
-1/4 cup almond butter
-1/4 cup apple sauce
-2 tbsp maple syrup
-1 tsp vanilla extract
-1/4 cup chocolate chips
-Preheat oven to 375F/190C
-Combine the coconut yogurt, coconut milk & vanilla extract. Transfer to a freezer-safe container & freeze for 2 hours, or until consistency is thick and creamy but still scoopable.
-Combine the coconut oil, almond butter, apple sauce, maple syrup, vanilla extract in a large bowl. Add in the almond flour, pinch of salt, cinnamon powder, baking powder and mix until thoroughly combined. Fold in chocolate chips.
-Using an ice cream scoop or a tablespoon, form 12 balls of cookie dough and place onto a baking sheet lined with parchment paper.
-Using your hands or the back of a spoon, press down firmly on each ball to form a cookie shape. Bake for 8-10 minutes, or until golden brown on the edges.
-Let the cookies cool for at least 10 minutes. -While the cookies are cooling, you can remove the frozen yogurt from the freezer and let it sit out to soften.
-Flip cookies over so the flat sides are facing up. Add one scoop of frozen yogurt to 6 cookies to form sandwiches by placing on top of the ice cream scoop and pressing down very gently to slowly spread out the frozen yogurt.
-Freeze for at least 1 hour.
