@hellofresh meal #2 . Chicken quarters cooked 150/4, browned under the broiler, then topped with a honey mustard tarragon vinaigrette. Served with roasted garlic and chive mashed potatoes (185/75 mins) and green beans amandine (185/40 mins). I’ve tweaked the recipes a bit but am really enjoying their meals!

- Chicken thighs
- 1/2 cup brown rice
- 1/2 Onion
- Kalamata olives
- 1.5 cups of chicken stock
- Fresh parsley
- Salt and pepper
- Lemon juice and zest
- Olive oil - Feta
- Marinate chicken thighs in olive oil, lemon juice and zest (from one half of lemon, save other half), garlic, parsley, oregano, basil, marjoram and salt and pepper, for at least 1 hour. Brown chicken skin side down in olive oil. Once crispy and brown, set chicken aside. Using same pan brown onion and garlic. Chop up olives and artichokes and add to onion mixture. Once onions are soft, add rice and chicken stock and bring to a simmer. Pour into a baking dish and place chicken on top. Cover and cook for 30 minutes at 450 degrees. Uncover and cook for 15 more minutes or until liquid is gone and rice is cooked through. Garnish with lemon wedges, parsley and feta. ————————————————————————Dinner

Lovely little dinner party this evening, a charity donation we made for an auction prize at the @wymondhamrfc dinner last year. Raised a lot of money for an excellent club and the development of their incredible community facilities.
This is a little assiette of Lemon: posset, lemon and poppyseed cake, lemon curd, Italian meringue, lemon tuille and lemon balm. It followed some awesome salt and pepper prawns with Norfolk kale kimchi and a beautiful loin venison with spiced squash and a lemon and caper cream. A real seasonal spread. All followed by some yummy @strangerscoffee roasters blend
I’ve worked out that our auction prizes have raised nearly £30k over the past 10 years. It’s lovely to have been able to give the gift of food to help so many worthy causes.

It’s actually much much much more simple than it looks. Some plating and micro herbs make it look a bit schmancy, but it was all cooked in one pan in about 15 minutes!
