Who’s ready for the (almost summer) weekend? I certainly am!
As I prepare for it, I have created a small arts-and-crafts station for my kids… to make healthy ice-creams!
These babies are:
🌿healthy 🌿(optional) dairy-free
🌿fun to make
I am offering different base coat and top coat options, for different flavours. Save this recipe for the summer! 🌿Make your base layer (choose from below)
🌿Pour into ice-cream molds and let freeze for 3-4 hours
🌿Prepare your top coat (see below)
🌿Unmold already frozen ice-creams and dip into coat bowl or pour on top with a big spoon.
🌿Since the base layer is frozen, the chocolate coat should freeze up pretty quickly. If not, place in the freezer for 30 minutes.
BASE COAT MANGO:
✨Blend frozen mango with a bit of water. Proportion 1cup fruit to 1/2 cup water. ✨You should get a thick, smooth, ice-cream like texture. You can add a bit more water if the blender struggles to blend.
BASE COAT RED FRUITS:
✨Blend frozen red fruits (I used a combination of raspberries, cherries, blueberries and blackberries) with a bit of water. Proportion 1 cup fruit to 1/2 cup water. ✨You should get a thick, smooth, ice-cream like texture. You can add a bit more water if the blender struggles to blend.
BASE COAT GREEK YOGURT:
✨Mix a greek yogurt with sweetener of choice. I used 1/4 cup of erythritol.
TOP BOAT CHOCOLATE:
✨Heat up 2oz of chocolate of choice (the higher cacao %, the healthier) with 1 tbsp coconut oil. ✨You can heat it up in the stove or microwave for 30 sec to 1 minute. ✨In this case, I made 3 coating options: 85% cacao for mama, milk chocolate for daddy and white chocolate for the kids.

Choline was only officially recognized as an essential nutrient by the Institute of Medicine (IOM) in 1998.
It serves vast roles in the body & metabolism, from contributing to the structure of the phospholipid bilayer in the cell membrane to constituting a precursor in synthesis of the parasympathetic neurotransmitter acetylcholine (ACh).
This is critical, as cholinergic parasympathetic neuotransmission is anti-inflammatory—without ACh, healing and repair cannot occur and the “rest and digest” or “feed and breed” arm of the autonomic nervous system will not function properly.
Choline is the major dietary source of methyl groups via the synthesis of S-adenosylmethionine (AdoMet), & therefore plays a role in methylation reactions that are important for the following:
✅ neurotransmitter synthesis
✅ lipid biosynthesis
✅ regulation of metabolic pathways
Choline is especially essential during pregnancy due to its role in brain and memory development in the fetus—it even appears to mitigate risk of development of neural tube defects.
The current IOM adequate intake for choline is:
📌 425 mg/day for women (450 mg/day for pregnant women, 550 mg/day for lactating women)
📌 550 mg/day for men
Choline supplemented at twice the recommended intake (930 mg), however, has been shown to improve infant processing speed (found this nugget from @organic.olivia)
Rodent studies, moreover, indicate that supplementing the maternal diet with choline during pregnancy produces life-long cognitive benefits for the offspring.
95% of women in the Nurses Health Study, however, don’t even meet the more conservative requirement, consuming less than 411 mg of choline/day.
Not only that, but 90% of the U.S. population is not consuming adequate choline, with NHANES data revealing that only 10% or fewer had usual intakes at or above the AI.
Egg yolks represent the most concentrated source of choline in the diet, & supply 680 milligrams per 100 grams.
It is difficult to meet the 930 mg during pregnancy with plant foods alone—this would be obtainable with 13 cups of cooked tofu, 10 cups of kidney beans, or 8 cups of shiitake mushrooms.

Homestretch for the 🌈 baby. I start to enjoy this process as I moved further along with my pregnancy instead of just questioning if things even will go wrong. I know it sounds corky but I feel pregnant and feels right. Last year , I didn’t even look or feel pregnant. We can’t wait to meet this little person that is going to complete our world. I guess it is really time to go buy a crib and getting the baby room ready! #13weeksleft .
