Good Morning everyone, So Saturday night was hands down INCREDIBLE! We had 16 NEW guests thats AMAZING! 16 NEW people had an opportunity to experience what we are creating!!! If you want to know how some of them viewed the evening go to my business google page and read the 5 reviews that came in from that night. The night would had not been so marvelous had I not had an AMAZING team! I owe it ALL to them. Thank you @angiemorenos@karenaneira@kpino13 and @kaiboy_nyc for making it such a memorable night. Here is the first dish of the night. Its Roasted Bone Marrow with a scallion salsa, pickled pears, house sour dough. Watching some people’s expressions and how they were apprehensive about this dish then watching them eat it and their reactions was PRICELESS! THEY LOVED IT!!!! You cannot visit Guadeloupe Islands without tasting a “Sorbet Coco”. It would be, like going to Italy and not tasting a good gelato, lol. Not acceptable for an ice cream lover like me... an ice-cream addict some would say. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
The Sorbet Coco is a traditional coconut ice cream in the French Caribbean you can buy it on barely every single beach of the islands.
I didn’t own an ice-cream maker at home during years, the recipe of the day was one a little trick I used to do when I was craving a “Sorbet Coco”.
Recipe of the day :
Smoothie “sorbet coco” inspired (without ice-cream maker) for 4-6
· 300 g coconut cream
· 300 g sweetened condensed milk
· 3 drops of almond bitter
· 1 table spoon of aged rum ( optional)
· 1 pinch of cinnamon
· 1 pinch of nutmeg
· 1 teaspoon of vanilla extract
· Lime zest
· Place the coconut cream in the fridge for at least 2 hours
· Whip the coconut cream with an electric mixer until it look like whipped cream.
· Add spices, aromas and sweetened condensed milk
· Mix gently
· Fill ice-cube trays with the mix
· Set aside in the freezer for at last 3 hours.
· In a mixer, mix the cubes until an homogenous liquid. ( if the mix is too tick you can add a bit of water ou coconut milk)

Il fait tellement moche aujourd'hui que je me dois de vous partager THE recette réconfortante ! Dhal de lentilles corail, riz noir, yaourt de coco et cajou 😋
Dans une casserole avec de l'huile, faire revenir 1 oignon, 2 carottes en rondelles et un demi chou fleur en morceaux. Ajouter les épices (curry, curcuma, coriandre moulue, gingembre en poudre, ail en poudre, sel, poivre) et les lentilles (400 grammes). Bien remuer et recouvrir d'eau bouillante. Laisser cuire jusqu'à ce que l'eau soit presque évaporée et verser une brique de lait de coco. Laisser mijoter 10 min et c'est prêt ! On peut affronter le froid après ça ✊🔥
