Classic huevos rancheros recipe with homemade Ranchero sauce, sunny side up egg, crispy fried tortillas, black beans, sausage meat and sliced avocado with pico de gallo (also known as tomato salsa).
Savoury, spicy, rich, zingy and zesty, this is a remake version of the skillet version huevos rancheros, except with the addition of sausage meat and Ranchero sauce, which is a tomato and chili pepper based sauce seasoned with lots of Mexican herbs and spices.
The tortilla is first toasted until it puffs up, and then the topping piled on top and drizzled generously with Ranchero sauce. This creamy, smokey and tangy sauce adds a perky punch of flavour to the dish. A sprinkling of crumbled sheep and goat's milk feta cheese (because we can't get queso fresco here) with coriander leaves ties all the elements together.

For my foodie friends, the best breakfast on the planet! Two poached eggs (covered in hollandaise sauce) on top of slices of tomato, avocado, crispy, fresh crumbled bacon and two chewy soft, gridled English muffins (they call it the "California") with adjacent, delicious home fries! If you are a local, Foodworks in Portsmouth, RI has the most incredible breakfast choices! This is just one of several I have tried, and loved!

I made a low sodium option for my bf, Viktor, which excluded the olives, salami, and bluebs- but only excluded bluebs because he’s not the biggest fan! 😱 total opposite for me and I went all in on my plate. Never underestimate the simplicity of Whole Foods! 🤗💕

Next is a pic of my two favorite kitchen tools. The built in cast iron stovetop griddle & my half sheet tray (lined with foil to reduce scrubbing time). Both make batch cooking and reheating a dream. Especially since the griddle is built in, because the burner under it matches its shape so there are fewer changes in temperature! .

I took eggs and black pepper out of my diet over a year ago after realising that both were attributing to my eczema flare-ups and chest tightness. Being able to eat both today tells me that my body is healing, and also fills me with so much joy and self-esteem because I've been able to do something that doctors couldn't.
For anyone living with symptoms, let this be hope that everything is solvable. Let’s do our research, seek advice from holistic doctors and most importantly listen to our body’s wisdom because (even if we don’t know it yet) everything we need to know to heal is already there 🙏🏻✨
Took inspiration from the crispy egg queen @sammyjaneeason and made eggs on toast with a twist 🍳🍞 this version is 2 slices @friaglutenfritt gluten-free toast slathered in @moorishumous smoked hummus 🤤 and basil pine nut pesto. Topped with two @daylesfordfarm organic pasture raised eggs fried in lots of @lucybeecoconut coconut oil and finished with cracked black pepper 👌🏻
